Offenbart wird eine Anhydrofructose-Reduktase, welche die Reduktion von Anhydrofructose zu Anhydromannitol zu katalysieren vermag, die die Anhydrofructose­Reduktase kodierende N ukleinsäure, den die Anhydrofructose-Reduktase erkennenden Antikörper, sowie ihre Verwendung in der Diagnostik von krankhaften Blutzuckerstörungen.
