Description

Method for dispensing frozen edible products and insulated container adapted therefore
Technical field of the invention
The present invention relates to a method for dispensing frozen edible products and to an insulated container adapted to said method.
Background of the invention
Selling ice cream impulse products in institutional outlets and catering facilities has always been a problem. Ice cream products are stored in freezing cabinets which, owing to their size cannot be located at the point where the customer makes his decision with regards to buying, or not buying, a dessert. It has now been noticed that the display of frozen products in a catering environment presents some very unique characteristics .
First of all, space is a very scarce resource. Secondly, products are only on display for less than 4 hours .
Counter-top freezers are available which allow for ice cream products to be presented to customers together with non-frozen products, but they need maintenance and connections to power sources . They are also quite voluminous whereas as already mentioned, in catering environments, space is a very scarce resource .
There is thus a need for a new way of displaying frozen products which will not require the use of any freezing equipment at the point of display, taking into account the two unique characteristics constituted by the space scarcity and the fact that products only need to be on display for a relatively short period of time.
It has now been found that it is possible, by using a specific new type of equipment to display in perfect safety, and while using a minimum space, frozen products in a catering environment for about 4 hours .
Tests and definitions
"Insulated container" shall mean a container with insulated walls, said insulated walls containing an insulating material having a thermal conductivity in the range of 0.5 to 50 milliwatt (meter Kelvin)"1. The insulated material can be, for example, polystyrene, fibreglass, or vacuum.
"Cooling means" shall mean containers containing a phase change material with a thermal capacity of between 150 and 300 kiloJoule/ kg over a temperature range of -25 to -5°C. Preferably the phase change material is a eutectic material.
"Re-freezing" operations between selling periods is defined on the basis of how much heat is absorbed by the cooling means and the frozen edible products during a selling period. This re- freezing operation takes place in a back-up refrigeration facility and the time the displaying means with its cooling means and any frozen edible products it contains are kept in this facility must be sufficient to remove the heat absorbed during a vending period. For an insulated container, with a transparent top, with a 30 litre storage capacity exposed for 4 hours in an ambient of 30°C, and with an insulated material having a conductivity of lOmilliWatt (irtK) "1, the heat absorbed will typically be around 250 kJ. Brief description of the invention
It is a first object of the present invention to provide an insulated container, for the storage and display of edible products at a temperature below 0 C, comprising;
opening means for the introduction and removal of said edible products removable displaying means for displaying said products and, . cooling means
wherein removable displaying means are adapted to hold cooling means .
In a preferred embodiment of the invention the opening means are located on a top surface of the insulated container. In another preferred embodiment of the invention opening means are located on a side surface of the insulated container.
In a preferred embodiment of the invention, also the removable displaying means comprise at least a bottom surface and two side, vertical surfaces above the bottom surface. In another preferred embodiment of the invention, removable displaying means comprise at least a horizontal surface adapted to be held horizontally on corresponding supporting means situated on an inner surface of the insulated container.
In a preferred embodiment of the invention the cooling means are removable from displaying means . In another preferred embodiment of the invention the cooling means are integral to displaying means. It is a second object of the present invention to provide a method for dispensing frozen edible products wherein an insulated container according to the invention and containing frozen edible products is situated at a point of sale and wherein at the end of a vending period, displaying means together cooling means and together with frozen edible products present in the insulated container are removed from said insulated container and stored together in a refrigeration facility and submitted to a re- freezing operation.
Preferably, the edible frozen products, while on display, are stored in said insulated container at a temperature of below -12°C, more preferably below -15°C, for a period of at least 2 hours , more preferably 4 hours .
Preferably, the frozen edible products are frozen- aerated products generally referred to as ice creams.
Detailed description of the invention
The present invention will be further described with reference to the drawings wherein
Fig 1 represents an exploded view of an insulated container.
Fig 2 represents displaying means .
Fig 3 represents a cross sectional view of an insulated container with its displaying means and cooling means according to the invention. As can be seen on Figure 1, an insulated container according to the invention can be constituted by a bottom surface, four side walls and a top surface. Each side wall and the bottom surface is constituted by an outer panel 1, and an inner panel 2 limiting an internal space containing an insulating material 3. The top surface is constituted by a lid frame 4, creating an opening, and a lid 5 adapted to close said opening. This lid can either be independent from the lid frame or connected to it by a hinge 6.
The insulating material is preferably in the form of vacuum insulated panels (VIPs) . VIPs are typically made of an open cell foam or granular structure which is enveloped and hermetically sealed into a gas impervious film under very low pressure. These panels have a thermal conductivity around 5 to 10 milliwatt (metre Kelvin)"1. Alternative insulating materials could for example be a closed cell foam structure such as expanded polystyrene, fibrous material such as fibreglass, a vacuum sealed within a sealed double wall container.
As can be seen on Figure 2, displaying means according to the invention can be constituted by a steel wire basket 10 presenting holding means 12 adapted to hold cooling means on an outside face of said basket. This steel wire basket is adapted to be removably fitted within the insulated container. Dividers 11 can optionally be fitted within the steel wire basket.
As can be seen on Figure 3, an insulted container, as described on Figure 1, is receiving displaying means, holding cooling means 7, and containing edible products 8 to be displayed.
The cooling means are preferably a solution or mixture, with a high enthalpy over a temperature range of -25 to -5°C, stored in containers or pads. A phase change material with a defined freezing point (eutectic) is preferable, for example an aqueous solution of sodium chloride or urea.
In operation, an insulated container equipped with its displaying means and cooling means, and filled with frozen edible products to be sold, is put on display at a point of sale, for example on a catering stall, and customers can chose and take a product from said insulated container. At the end of the vending period, the displaying means, together with the cooling means and any remaining frozen edible product are removed from the insulated container and transferred into a refrigerating unit to be submitted to a re freezing operation. When a further vending period is due to take place, for example the following day, the displaying mean together with the cooling means are taken out of the refrigerating unit and, after having been optionally refilled with edible products, are re-introduced into the insulated container.
The insulated container can be put on the top surface of a stall or a table but can be particularly adapted to fit within recesses 9 present in catering stalls and normally used for 'bain marie' operations as shown in Figure 3. If the 'bain marie' is switched off, the recess can advantageously be used to hold the insulated container. Such an embodiment will give further stability to the insulated container and lower down its opening, making it more visible and accessible to customers, while making optimal use of the space.
