Abstract

L'invention concerne une technologie d'extraction de pectine à partir de matières premières végétales, qui peut s'utiliser en industrie alimentaire. Le procédé de fabrication de pectine comprend l'extraction par hydrolyse des matières premières contenant de la pectine, avec un hydromodule du mélange de 1: (3-4) au moyen du traitement par cavitation avec un indice de cavitation 0,2 - 1,9 du mélange des matières premières contenant de la pectine et de l'eau à pH 2-4 pendant 15-25 min. et une surpression de 0,41 - 0,45 MPa dans la chambre d'extraction de l'extracteur - désintégrateur. On sépare ensuite la pulpe obtenue en phases solide et liquide dans le champ d'action des forces centrifuges, avec un facteur de séparation de Fr 110-130, jusqu'à ce que la teneur en suspensions solides en phase liquide s'élève à 0,1 % de sa masse au maximum. La concentration de la phase liquide se fait par ultrafiltrage, sous une pression de 0,05 - 0,31 MPa, au moyen de membranes d'ultrafiltrage sur substrat solide et un diamètre de pores de (1-10)10-9m et un débit de circulation de la phase liquide de 0,1 - 2,0 m/s, jusqu'à ce que le concentré final contienne 4,4 % de substance de pectine au maximum. Le séchage du concentré se fait par pulvérisation à une température de 50-65 °C, en utilisant des buses ultrasonores. L'invention permet d'augmenter la sortie du produit fini qui possède une capacité gélifiante élevée, avec une intensification globale du procédé de fabrication.
