Abstract

La presente invención concierne a un método de fabricación de pectina acromática con índice de polidispersión menor de 2, con una distribución de peso molecular 1-, 3-modal y con un grado de esterificación 12-81%, alto poder gelificante y con alta capacidad emulsionante; pectina modificada con un peso molecular 20-40 KDa, con un grado de esterificación de 5-11%, pectina estandarizada con temperaturas de gelificación de 25-85°C; fibra dietética modificada acromática con capacidad de retención de agua 10-20 g/g y de aceite 0,2-5,4 g/g por unos procesos de tratamiento con H{sub,2}O{sub,2}, hidrólisis por expansión súbita, fraccionamiento del extracto según el grado de esterificación y de peso molecular y secado en un lecho hirviente.
