Abstract

An alcohol can be directly and efficiently obtained from starch via fermentation by integrating a plasmid, which is constructed so as to present glucoamylase on the surface layer and secret α-amylase, to a yeast and growing the resultant yeast using starch as a substrate. Compared with a yeast presenting glucoamylase and α-amylase on the cell surface layer, a yeast presenting α-amylase on the cell surface layer and secreting glucoamylase or a yeast presenting glucoamylase on the surface layer, the above-described yeast has an excellent capability of alcohol fermentation and shows an alcohol yield of 40%, i.e., being comparable to alcohol fermentation form glucose. Use of α-amylase originating in Streptococcus bovis makes it possible to produce ethanol directly from uncooked starch (raw starch).
