- phytates have not been given importance in the human diet. Moreover, it has even been considered an antinutrient since, consumed in large doses, it can interfere with the bioavailability of certain mineral elements (calcium, iron, zinc) (JL Kelsey, Am. J. Gastroenterol. 82, 983-986 , 1987). However, recent work shows that phytates have beneficial and unsuspected health effects.
- Phytates also lower blood glucose levels, with the consequent beneficial effects in the control of diabetes, due to its ability to bind to intestinal amylase, decreasing its activity and consequently reducing the release of simple sugars. It has also been suggested that, due to their antioxidant capacity, phytates may exert a protective action against colon cancer (AM Shamsuddin, I. Vucenik, KE Cole, Life Science 61, 343-354, 1997).
- This action is further reinforced by its ability to inactivate ⁇ -amylase, causing part of the starch to reach the undigested colon, where it can then be fermented by bacterial flora producing short-chain fatty acids that, when lowering the pH, cause a reduction in the solubility of bile acids and a neutralization of ammonia, which appear to be tumor promoters.
