Appareil pour ouvrir les huîtres comportant une lame (6) portée par un levier mobile (4) autour d'un axe (9), et un moyen (1) permettant de placer une huître de chant dans le plan perpendiculaire à l'axe (9) et suivant lequel peut se déplacer ladite lame (6), de manière à la faire pénétrer entre les lèvres des deux valves de l'huître pour atteindre le muscle et le sectionner, caractérisé en ce que ladite lame (6) est de forme effilée, articulée sur le levier (4) et disposée entre celui-ci et le moyen (1), et dont la tranche affûtée se trouve amenée par rapprochement du levier (4) vers le moyen (1) à pénétrer par sa pointe (7) entre les lèvres des deux valves jusqu'à atteindre le muscle (13) en avant de celui-ci par rapport à la charnière (12) du coquillage, et un moyen (10) assure le basculement automatique de ladite lame (6) dans la direction de la charnière (12) de la coquille de l'huître en vue du sectionnement de son muscle (13).1.
