Description

APPARATUS FOR OPENING OYSTERS. The present invention relates to an apparatus for opening oysters. The technical sector of the invention is the field of kitchen and table utensils, to help cooks, dish servers and / or consumers thereof. to prepare food and in particular, in the present invention, to open fresh oysters or other molluscs, in order to present them for consumption in the best conditions.
The most well-known and simplest device for opening oysters is the knife, the blade of which is inserted between the lips of the shell valves to cut the mollusc muscle which keeps them closed. The known disadvantage of this means is the need to have a certain skill, the introduction of the blade is not always easy, and may cause injury to the hand.
To facilitate the introduction of the blade, certain devices make it possible to break the end of the shell, thus making a passage to reach the muscle. Such devices have the disadvantage that the action of breaking the end of the shell causes shells of mother-of-pearl which can be introduced inside the shell. making tasting the mollusc unpleasant.
Similarly, various other devices have been developed and have been the subject of patent applications, such as that FR 2432289 which describes a fairly complicated device, which must be fixed on a fixed support such as a table, and which requires no less than four successive movements of four independent movable means to obtain the desired result; namely, a vertical lever provided with a claw which immobilizes the oyster flat in a receptacle, a device adjustable in height and compensated by a spring to position the opening blade opposite the lips of the oyster, a handle moving the blade to insert it between said lips and a lever articulated on the previous handle and support of this blade to cut the muscle; in addition, the arrangement of such a device has the blade on the side diametrically opposite to the hinge of the oyster, therefore distant from the muscle, which makes it difficult to cut and can damage the flesh.
We can also cite the patents US 2000075 and US 2747220 which teach systems of the articulated slicer type with a large long blade, which must be guided and threaded between the lips of the oyster, which is held in a receptacle; the blade must be lowered between the lips until directly cutting the muscle; but during this movement, as the lips of the oysters are never in a rectilinear plane but always curved, wavy and left, the blade of the slicer can only deteriorate the valves of the mollusk, and cause numerous chips of scales which make the mollusk difficult to consume in good conditions. Furthermore, patent application FR 2717668, which is not very explicit in its description, teaches a device which is similar to that of application FR 2432289 analyzed above, namely with a presentation of the oyster. flat, but without holding lever or blade height adjustment, which can make it difficult to immobilize and adapt to different thicknesses of oysters; the only originality of this device is the possibility of adjusting the point of articulation of the blade support handle, not in height but in width with respect to the oyster; however, the blade is short and it is not clear how it can certainly cut the muscle, except to increase its width and length as in the slicers described in previous US patents, which would also damage the lips oyster, as explained above.
Finally, and more recently, to avoid the above drawbacks, it has been proposed to introduce a steel wire between the valves, at the back of the muscle, after having placed the oyster in a bath with a high concentration of salt to cause spontaneous opening of the shell. This device has the disadvantage of being expensive. It indeed requires a wire for each oyster. But above all it requires a long manipulation. It is indeed necessary to soak the oysters for a certain time in a salted bath, until they open; then take them one by one to introduce the wire; finally soak them in a new bath to remove excess salt. As many manipulations which involve a significant labor cost to prepare each oyster and provide it with the wire, from where a high cost price at the level of the production.
The object of the present invention is to eliminate each of these drawbacks, by means of an apparatus usable directly by the consumer, which does not increase the cost of producing the oyster, said apparatus ensuring the opening of the oyster without any risk of injury to the user, and without causing a scallop inside the shell and which would make consumption of the mollusc unpleasant.
For this, the device comprises a means making it possible not to hold the oyster in the hand, but to automatically place it in the position such that the blade of a knife operated by a lever of the apparatus, penetrates directly and automatically by a simple movement of rotation of the lever between the lips of the two valves of the closed oyster until reaching the height of the mollusc muscle in front of it relative to the hinge of the shell, said knife comprising a means which then pivot its blade in the direction of said hinge, which causes it to automatically cut the muscle, thus causing the opening of the shell, from which it is then easy to extract the flesh of the mollusk to taste it without splinting mother of pearl. The objective of the present invention is thus obtained with an apparatus for opening oysters comprising a blade carried by a lever movable around an axis, and a means making it possible to place a song oyster in the plane perpendicular to this axis and following which can move said blade, so as to make it penetrate between the lips of the two oyster valves to reach the muscle and cut it; according to the present invention, said blade is of tapered shape, articulated on said lever and disposed between the latter and the receptacle means of the oyster, and whose sharpened edge, for example opposite the axis of said lever, is brought by bringing said lever towards the oyster receptacle means, to be penetrated by its tip between the lips of the two oyster valves; and a means ensures the automatic tilting of said blade in the direction of the oyster hinge, ie for example opposite that of the axis of said lever.
In a preferred embodiment, said means ensuring the automatic tilting of said blade, is constituted by an arm integral with this blade, said arm developing from its articulation on said lever, for example in the direction opposite to the axis of that -ci, on the side and beyond the sharp edge of said blade; said arm causes the automatic pivoting of the blade towards said hinge of the oyster as soon as, in the operation of said lever, the end of said arm comes into contact with the edge of the oyster on which it is supported.
The invention is further characterized by the details which will emerge from the description which will be given thereof.
Figure 1 is a schematic side elevational view of the object of the invention, showing in dotted lines its various elements in the working position. Figure 2 is a schematic front elevation view of the same object. According to Figure 1, the device comprises a means such as a cradle 1, produced in the hollow and of elongated oblong shape capable of receiving a song oyster 11, its opening plane can thus be placed in the vertical median plane XX ' of the device.
Said cradle is carried by a lever 3, a free end 8 of which has a shape which facilitates handling.
At the other end of said lever 3, there is a support 2 standing, for example perpendicularly, above the horizontal upper plane of the cradle 1, and preferably in the vertical plane XX 'of symmetry of the latter.
A l'extrémité libre du support 2, un autre levier 4, se terminant en forme de poignée 5, est articulé au niveau de l'axe 9 perpendiculaire audit plan XX'..At the free end of the support 2, another lever 4, ending in the shape of a handle 5, is articulated at the level of the axis 9 perpendicular to said plane XX '.
The levers 3-8 and 4-5 thus articulated one on the other together form a kind of clamp capable of receiving an oyster placed in song in the cradle 1, and including the hinge 12, according to the embodiments shown in as examples, is positioned in the direction opposite to the axis 9 of the levers so that its muscle 13 is located between this axis and the hinge. In other embodiments, the oyster could be positioned in the opposite direction, and the blade 6 and its arm 10 described below would then be mounted in the opposite direction.
In the plane XX 'which can be of symmetry of the lever 4-5, coinciding with the median plane which can be of symmetry of the cradle 1, is articulated around an axis 14 the knife formed by a blade 6 of substantially leaf shape developing between the lever 4-5 and the cradle 1 in a tapered form ending in the point 7, and the edge of which, opposite here to the articulation 9 of the lever 4-5, ie on the side of the hinge 12, is sharpened.
The blade 6 also carries an arm 10, which can be produced in a single piece as shown in FIG. 1, the end 20 of said arm 10 being preferably preferably at least greater than that of the blade itself, and which develops from the articulation 14 of the blade 6 beyond its sharpened zone, in the direction of the hinge 12 of the shell, that is to say in the example shown, opposite to the axis 9.
Un ressort épingle 15 est placé au niveau de l'articulation 9 en vue de faciliter l'ouverture de la pince créée par les leviers 4-5 et 3-8.A pin spring 15 is placed at the joint 9 in order to facilitate the opening of the clamp created by the levers 4-5 and 3-8.
The device being thus constituted, and being taken in hand in the manner of a clamp, an oyster 11 is placed singingly in the cradle 1, its hinge 12 being placed on the side of the handle 8 of the lever 3, the lever 4 being itself raised under the effect of spring 15.
The position of the articulation 14 of the blade 6 on the lever 4-5 is such that, when closing the clamp constituted by the levers 3-8 and 4-5, the tip 7 of the blade 6, which is present in the plane XX 'of symmetry of said cradle 1, and which corresponds to the plane separating the lips of the two valves of the oyster, is then automatically caused to penetrate between these lips until reaching the muscle 13, in front of it ci relative to the hinge 12 of the oyster; the position, the latter being for example maintained by one of the operator's hands in said cradle 1, in a position such that the point 7 is exactly between the two lips of the mollusk.
La surépaisseur 20 qui lui a été donnée l'empêche plus facilement de pénétrer entre les lèvres.3-8, 4-5, and optionally actuated by the other hand than that holding said mollusk, the end 20 of the arm 10 of the blade 6 will come into contact with the edge of the shell. The extra thickness 20 which has been given to it more easily prevents it from penetrating between the lips.
By continuing the force of closing the clamp, this end 20 of the lever 10 then taking support on the shell and sliding on the edge of the latter, thanks for example to a shape of rounded type and of axis perpendicular to said lips, will tilt the blade 6 around its axis of rotation 14 so as to pivot it towards the hinge 12 of the oyster, thus causing it to cut, thanks to its sufficient length for this, the muscle 13 that it meets, which will cause the instantaneous opening of the shell from which the valves can be separated by hand.
The opening can therefore be considered automatic without at any time the operator has run the slightest risk of injury, without any shell of mother-of-pearl being introduced into the mollusk and with the assurance that the blade 6 always cut muscle 13, because of the amplitude of its rotational movement and its length defined large enough by any person skilled in the art knowing oysters, to be sure to meet muscle 13 and cut it.
The extra thickness 20 of the arm 10 can be constituted by an insert of cylindrical shape for example, having a good coefficient of sliding relative to the surface of the oyster. It is also possible to add a return spring either on the axis of rotation 14, or between the arm 10 and the lever 5 of the clamp: this spring brings said blade 6 back into the penetration position between the lips of a mollusk, to that between two opening operations, the operator does not have to manually return said blade to this position after its rotation to cut the muscle 13.
Incidentally, the device includes a ring 16 making it possible to keep the clamp closed during periods of non-use. Similarly, it may include a corkscrew 17 articulated around the axis 18 and contained in the housing 19 formed in the support 2.
