  • the apparatus according to the invention provides the possibility of dispensing the desired portion into the space between the entrance flap and the exit flap and retaining it there until finishing in the oven is desired, at which moment the exit flap is oper- ated.
  • Retention of the portion in said space achieves as further advantage that the oven's cycle time is shortened; since, as soon as there is a demand for a portion to be finished, it can be dispensed into the oven immediately without undergoing the entire metering channel cycle. Consequently, it is desirable that the entrance flap and the exit flap of the metering channel interact such that during operation no direct link is established between the holder and the oven. It is further desirable, that the foodstuff in the holder and the metering channel is maintained below approximately -10°C.
  • the application of the metering channel also ensures that the formation of condense on the foodstuff is prevented, which condense could cause the indi- vidual elements constituting the foodstuff to freeze on to each other. Such freezing on to each other would have an adverse effect on the accurate metering of the desired portions .
  • the oven is an electrically heated hot- air oven.
  • a pre-eminently well suited oven for this purpose is the oven described in the applicant's own Dutch patent application 1002813, which application, by reference, should be considered as being inserted herein.
  • the advantage of using such an oven in the apparatus according to the invention is that the apparatus can be employed anywhere, especially in areas where the use of fat or oil for finishing foodstuffs is prohibited.
  • the apparatus being used in petrol stations, drilling stations, lunchrooms, hospitals, company canteens and clubs, cafes cum bistro, swimming pools, universities, refectories, schools and in general all the places where there is a limited availability of fried and deep-fried foodstuffs due to there being no or too small a suitable work force .
  • the apparatus according to the invention is preferably operated such that during finishing, the oven is adjusted to maintain a temperature of approximately 240°C.
  • the foodstuff can then be finished in 60 seconds at the most .
  • the apparatus according to the invention makes it possible to finish deep-frozen foodstuff without the use of fat . This provides the advantage that there is a decrease in costs, the fire hazard is substantially reduced, there is less of a burden on the environment, and healthier eating habits are encouraged.

  • the oven 3 is equipped with electrical heating means having a power requirement of at least approximately 6 kW. Said power capacity and finishing temperature and finishing time have been shown to result in foodstuff of good quality. Lower power capacities have been shown result in a quality reduction of the ready product.
  • control unit 4 After insertion of a coin into the coin unit 12 or insertion of a bank note into the bank note reader 13 and confirmation of this payment, pay unit 11 signals to control unit 4 that a portion of foodstuff is to be prepared. If no pay unit is employed, the fry cycle has to be initiated in another manner, for instance, by operating a start button. An appropriate portion is already waiting in the metering channel 9. Control unit 4 directs the flap control 5 to operate exit flap 8 in order to load the oven with said portion. In the oven 3, the foodstuff is subjected to the desired heating up to the finishing temperature. In the case of a portion of french fries, said temperature is 240°C.

  • the control unit 4 causes flap control unit 6 to open entrance flap 7 to allow a next portion to be dispensed from the holder 2 for the deep-frozen foodstuff into the metering channel 9.

  • control means 4 When buying more than one portion, and after receipt and con- firmation of the payment, the control means 4 first operates the flap control member 6 in order for the flap 7 to open and to allow the desired extra portions to reach the metering channel 9 to be added to the portion already there. The control means 4 then closes the entrance flap 7 while control means 4 causes flap control member 5 to open the exit flap 8 to load the oven 3. After said loading, flap control member 5 is again made to close the exit flap 8, subsequent to which, in the manner described above, one single portion is dispensed into the metering channel 9, awaiting a following sale and loading of the oven 3.

Abstract

L'invention concerne un dispositif de finition d'une portion prête à l'usage d'un aliment surgelé, lequel dispositif est doté d'un récipient, destiné à conserver l'aliment surgelé, ainsi que d'un four, destiné à recevoir cet aliment et couplé au récipient via un dispositif de mesure. L'invention concerne également des moyens de commande du dispositif de mesure servant à fournir, à partir du récipient, une portion voulue au four, aux fins d'exécution du processus de finition dans celui-ci. Entre le récipient et le four on a donc monté un conduit de mesure, lequel est doté d'une trappe d'entrée et d'une trappe de sortie que l'on peut commander de façon indépendante.
