Abstract

Instrument (1) permettant de séparer rapidement et avec efficacité les côtes de la carcasse de l'animal, comprenant un segment (2) consistant en un élément sensiblement tubulaire (3). Ledit segment (2) comporte un bord avant circulaire (4) et deux bords rectilignes (5) s'étendant à un certain angle par rapport à l'axe central (6) du segment tubulaire (3). La circonférence externe du segment (2) comprend une plaque (7) ayant un bord coupant dirigé vers l'extérieur et l'avant, en direction du bord avant circulaire (4). Lorsqu'on introduit le bord avant (4) de l'instrument (1) entre une côte et le fascia de l'os, l'instrument suit le fascia non brisé de l'os, et lorsqu'on pousse l'instrument vers l'avant, le bord (8) coupera le fascia de l'os tandis que le bord avant (4) séparera le fascia sur une bonne partie de la circonférence des côtes. On peut ainsi enlever ensuite la côte sans risquer d'inclure le fascia de l'os ou d'enlever simultanément de la viande adhérant à la côte.
