Abstract

La présente invention se rapporte à de nouvelles glucose-isomérases mutantes présentant des propriétés améliorées dans des conditions d'application. Lesdites glucoses-isomérases sont obtenues par expression d'un gène codant pour ladite enzyme et ayant une séquence d'acides aminés qui diffère au moins par un acide aminé de la glucose-isomérase à phénotype sauvage. Les enzymes mutantes préférées sont celles obtenues à partir de la glucose-isomérase Actinoplanes missouriensis.
