Abstract
The disclosed device enables to peel automatically fruits or vegetables and vegetable stems, and is characterized in that the latter are made integral with a system which subject them to a controlled translation (1), rotation and lifting motion, in an aqueous medium, by electromechanical means; said means make all of the surface to be peeled past by a peeling element (6) of which the penetration depth is controlled by the indication of a ultrasound probe (2).

Conformément à l'invention, les produits à éplucher sont rendus solidaires d'un système qui leur fait subir, dans un milieu aqueux ou aérien, un mouvement (1) réglé de translation, de rotation, et d'ascension par des moyensélectro-mécaniques qui fait défiler la totalité de la surface de l'élément à peler devant un élément de pelage dont la profondeur de pénétration est réglée par l'indicatio d'une sonde à ultra sons (2) dont la longueur d'onde sera adaptée aux dimensions de la machine et qui pourrait se situ entre 2 et 7 MégaHertz. La sonde donne une mesure de distanc (3) par rapport à la peau de l'élément à peler ; à cette mesure, correspond un niveau électrique qui, par l'intermé¬ diaire d'un amplificateur différentiel (4) va agir par un moyen électromécanique ou hydraulique (5) faisant plus ou moins avancer l'élément de pelage (6).
