CULINARY APPARATUS.
Specification of Letters Patent No. 30,214, dated October 2, 1860.
To alt whom it may concern:
Be it known that I, ISRAEL FORMAN, of Grafton, in the county of Taylor' and State of Virginia, have invented a new and Improved Culinary Apparatus; and I do hereby declare that the following is a full, clear, and exact description of the same, reference being had to the accompanying drawings, forming a part of this specification, in which- Figure l, is a front view of the apparatus with a portion of its sliding door broken out to show the interior of the chest when it is used for steaming. Fig 2, is a vertical cross section of Fig. l. Fig. 3, is a vertical cross section of the apparatus when arranged for roasting. Figs. 4t and show one of the pans used in the steamer.

This invention is a combined steamer and refiecting roaster to be used either on an ordinary cook stove or before a fire.
It consists in constructing a chest or chamber made of suitable sheet metal, in such a i manner, that it will hold water in its bottom, for the generation 'of steam, that it will hold the articles to be cooked on racks arranged within it; and it also consists in furnishing this chest with a movable sliding door which, when the apparatus is to be used for roasting, will be removed from the side of the chest, and introduced within the chest between inclined flanges forming an acute angle with the top of the chest which slants downward, so that the articles placed on a horizontal shelf will receive the heat reflected from both inclined or slanting surfaces, thus combining a roaster, steamer and baker in one and the same apparatus or utensil, as will be hereinafter described and represented.
To enable those skilled in the art to make and use my invention I will proceed to describe its construction and operation.
In the drawings A, is a box or chest of suitable size that is made of thin sheet metal with a slanting top, as shown in the two sectional Figs. 2 and 3, its front end is closed by a sliding door B which may be removed from the box. This box is furnished on its inside with open or close shelves or trays C, C', on which the articles to be baked or roasted are placed. The bottom of the box has a deep pan Gr, for holding water to gen-` erate steam for cooking with steam. The shelves may be taken from the box when it is to be used for roasting, and the door B, is placed within the box by sliding it up on the flanges a, a, so that this door becomes a reflector like the slanting top of the box. In this case the meat or other article, is laid on the shelf O, which as above stated is movable and may be lifted out of the box. The heat is in this manner reflected to all sides of the article placed on the shelf.
As a steamer the door B, which before served as a reflector, is removed and arranged in the front of the box A, as clearly shown in Figs. 1 and 2, the bottom of the box A, then filled with water, and the shelves arranged in their proper places, within the box, when the box is ready it is placed on a stove and when the water in the bottom commences to boil the articles to become cooked by steam are put on the shelves C, C', and the box is closed up by the door B.
Movable legs shown in the first three figures may be attached to the box and when it is thus mounted it may be set over a coal fire and the baking or steaming done in this manner. T he top of the box being inclined, the steam that condenses on its under surface will not fall on the articles cooking but will trickle down the sides of the box into the pan again.
Having thus described my invention what I claim as new and desire to secure by Let ters Patent, is-
