My invention relates to the removal of ten- 'dons and the like from chicken, turkey or other fowl legs, and has among its objects and advantages the provision of an improved tendon extractor.

In the embodiment of the invention selected for illustration, I make use of a plank H) which may be nailed at l2 to a wall or other support 14. A metal strap or jaw l6 isattached at l8 to the plank l and is bent to provide an angular length 20 having a V-shaped notch 22 extending inwardly of its upper end.
To the lower end of the strap I6 is connected at second strap or jaw 24, as by a hinge 26. This strap is also provided with a V-shaped groove 28 extending inwardly of its upper end. A rod 30 has its upper end pivotally connected with an eye bolt 32 attached to the strap 24 and its lower end loosely connected with an eye bolt 34 attached to a foot operated pedal or lever 36. One end of a tension spring 38 is attached to the plank I0 through the medium of an eye bolt 40. The

In operation, the leg is broken between the knee and ankle joints and the ankle is then slipped into the notch 22 and the knee joint into the notch 28 underneath the strap 24. As a pull is brought to bear on the leg through downward pivotal movement of the lever 36, the tendons are pulled from the leg. The V- notches 22 and 28 secure firm grips on the leg so that the necessary pull may be applied thereto.
The device is actuated by foot pressure so as to free both hands for handling purposes. a
Without further elaboration, the foregoing will so fully explain my invention, that others may, by applying current knowledge, readily adapt the same for use under various conditions or service.
I claim: l p
1. A tendon extracting device comprising a plank adapted to be secured in vertical position against a support, an elongated angularly bent metal strap having its lower portion fixed in vertical position against the plank and its upper portion extending upwardly and outwardly from said lower portion, the outer end portion of the upper strap portion being curved upwardly and provided with a slot, and a second elongated strap having one end hingedly connected to the bottom of the first strap, said second strap having its outer end portion curved and provided with a slot, said straps being adapted to engage a fowl leg in the respective slotted end portions for p1111 ing the tendons therefrom.
2. A tendon extracting device comprising a plank adapted ,to be secured in vertical position against a support, an elongated angularly bent metal strap having its lower portion fixed in vertical position against the plank and its upper portion extending upwardly and outwardly from said lower portion, the outer end portion of the upper strap portion being curved upwardly and provided with a slot, a second elongated strap having one end hingedly connected to the bottom of the first strap, said secondstrap having its outer end portion curved and provided with a slot, said straps being adapted to engage a fowl leg in the respective slotted end portions for, pulling the tendons therefrom, an elongated foot lever, means hinged: ly connecting one end of said lever to the plank at a point below the straps, a link having one end pivotally connected to the intermediate portion of saidsecond strap and its other end pivotally connected to the intermediate portion of the lever, and a tension spring having one end connected with the plank above the lever and its opposite end connected with the lever to normally hold the lever in laterally extending position.
