Specification of Letters Patent.

1 b all whom it may concern Be it known that 1, JOHN l-IUNs1NoER,Sr., a citizen of the United States of America, residing at Detroit, in the county of Wayne and State of Michigan, have invented certain new and useful Improvements in Sinew and Tendon Extracting Devices, of which the following is a specification, reference being had therein to the accompanying drawings.
My invention aims to provide a sinew and tendon extracting device that may be advantageously used in hotels, restaurants and poultry markets, where a large number of fowls are killed, cleaned, prepared or sold, the device being employed for removing sinews, tendons and other indurate matter from the fleshy part of a chicken, turkey or other fowl legs, so that the first joint portion of a fowl leg will be practically as tender and edible as the second joint portion of the leg.
My invention further aims to provide a device of the above type that may be mounted on a wall, adjusted for the legs of various sizes of fowl, and safely, easily and quickly manipulated to extract the sinews or tendons.
My invention possesses other advantages which will be apparent as the nature of the v invention is better understood and reference will now be had to the drawing, wherein Figure l is a perspective view of the device;
Fig. 2 is a side elevation of the same partly broken away; and
Figs. 3 and 4 are detail cross sectional views of the claw portion of the device.
The device comprises a wall bar 1 having the ends thereof inbent and formed to provide apertured ears or lugs 2 to receive screws 3 or other fastening means whereby the wall bar 1 may be connected to a wall or other support 1 and held in spaced rela tion thereto, the space between the bar 1 and the wall 4 being necessary in order to provide clearance for certain adjustments that will hereinafter appear.
Contiguous to the upper end of the wall bar 1 and at the outer side thereof is a claw or hook shaped member 5 providing a tapering or V-shaped slot 6 adapted to receive and hold the foot 7 of a fowl, for instance a chicken or turkey. The foot 7 may be frictionally held or wedged in the slot G, but to guard against the same becoming accidentally displaced during the operation of the device I provide a side wall necessary to clamp the foot 7 in engagement with the claw member 5 of the device.
The wall bar 1, adjacent the lower end thereof, is provided with a series of transverse openings 13 and in one of said openings and capable of being placed in any of the other openings is a pivot bolt 14 having a winged thumb nut 15.
Pivoted on the bolt 14-, at the opposite side of the wall bar 1 from that side supporting the clamping member 8, is the inner end of an operating lever 16, having an inner wall in a plane with the side wall of the bar 1 and having its outer side wall provided with a claw member 17 which affords a tapering or V-shaped slot 18 adapted to receive the first joint or fleshy part 19 of a chicken leg. The leg has been illustrated by having sinews or tendons 20 adapted to be extracted by the device, and to place the device in operation, the joint between the foot and the leg or first joint thereof is broken or fractured. The foot is then placed in engagement with the claw mem ber 5 and if: necessary clamped therein.
The first joint or the fleshy part of the leg is then placed in the slot 18, with the operating lever 16 in proximity to the wall member 5. After this is accomplished, the operating lever 16 can be lowered to carry with it the chicken, and the sinews or tendons will be held by the foot 7 while the leg is stripped from the sinews or tendons, Vith some fowls considerable pressure is required on the operating lever 16 in order to extract the sinews or tendons, and with the foot 17 in positive engagement with the claw member 5, both hands may be employed to operate the lever 16 and bring sufficient force to bear on the lever to accomplish the desired results.
It is thought that the operation and utility of the device will be apparent without further description, and while in the drawing there is illustrated a preferred embodiment of my invention, it is to be understood that the structural elements are susceptible to such variations and modifications as fall within the scope of the appended claim.
What I claim is A device of the character described comprising a wall bar, a claw member adjacent the upper end of said bar adapted for holding a fowl foot, an adjustable p'ivot bolt carried by said bar adjacent the lower end thereof, an operating lever having the inner end thereof pivoted on said adjustable bolt and supported in the same plane as a side wall of said bar a claw membercarried by the outer side of said operating lever and adapted to receive the fleshy part of a fowl leg so that the leg may be stripped off of the sinews held by the fowl foot, and a clamping member adjustably connectedto that side of said bar opposite the operating lever and adapted to be lowered onto the fowl foot to cooperate with the claw member of said bar in holding the foot in said claw member.
