PARING KNIFE.
Application filed May 11, 1925. Serial No. 29,305.
This invention relates to improvements in paring knives the primary object bemgto provide a simple and inexpensive knife which may be effectively used to pare or peel various kinds of vegetables or fruits, there being an adjustable guard applled to the blade of the knife in such manner that 011 adjustment, provision is made for paring different kinds of vegetables and fruits some vegetables and fruits requiring a deeper slice or out than others.
Another object is to provide a paring knife of the character described in which there is provided a means for adjustably and removably fastening a guard to the knife whereby guards of different sizes may be readily applied as desired, it being necessary in paring certain fruits and vegetables which have comparatively thick skins to provide for different spacing of the guard from the blade as compared to the spacing required when paring fruits and vegetables having thinner skins.
With the above mentioned and other objects in View, the invention consists in the novel construction and combination of parts hereinafter described illustrated in the accompanying drawings, and set forth in the claim hereto appended, it being understood that various changes in the form, proportion, size and minor details of construction within the scope of the claim may be resorted to without departing from the spirit or sacrificing any of the advantages of the invention.

The paring knife of this invention comprises a knife blade 1 having the usual handle 2 and provided with a cutting edge 3 along one edge thereof. Extending along one side of the knife blade, parallel thereto and adjacent the cutting edge, is a guard strip t having thickened right angularly extended bifurcated ends 5. The thickened ends provide for spacing the body of the guard from the edge of the knife. Screws 6 are inserted through openings 7 in the blade and extend through the bifurcated ends 5. lVing nuts 8 are turned on said screws and are adapted to bear upon the bifurcated ends. By this arrangement the guard may be adjusted so that it is disposed at the desired point projecting forwardly in front of the cutting edge, the nuts being tightened to secure the guard in adjuste position. The guard extending in front of the cutting edge and providing a space between it and said blade provides for contact of the guard with the vegetable or piece of fruit to be pared so that an even paring operation may be carried out. The adjustment of the guard provides for adapting the instrument for paring different kinds of vegetable or fruit, it being necessary with certain kinds of vegetables or fruit to make a deeper cut in the paring thereof than is required for other kinds of vegetables or fruit. Furthermore, the shape of the vegetable or fruit makes it desirable to adjust the guard to provide for an effective paring operation. In some instances it may be necessary to provide a greater space between the guard and cutting edge, as for example in paring thick skinned fruit, like oranges. The fact that the guard may be removed provides for the ready substitution of another guard having thicker ends and providingfor the spacing of the guard to a greater extent from the blade. In the present. instance, the guard is applied to the knife having a point. The guard does not extend over the point of the knife so that the point cannot be used for the removing of,
the eyes or other substances from potatoes, etc.., while the guard is on the knife. However, the guard may be applied to any type of knife whether pointed or not, as desired.
- I claim:
A paring knife comprising a knife blade having a cutting edge, a guard strip, extending in spaced parallel relation to one side of the blade adjacent the cutting edge and projecting forwardly from said ed e, said strip having integral right angulary extending portions on the ends thereof, which portions substantially the entire length of the blade are thicker than the strip and are bifurcated, except as to the point portion of the blade screws carried by" the knife blade and exand being disposed in spaced relation to the 40 tended through the bifurcations of said porblade by reason of the relatively thicker tions and nuts turned on the screws adapted right angularly extending portions.
