Be it known that I, LOUIS G. Miissioor'rn, acitizen of the United States, residing at Providence, in the county of Providence and State of Rhode Island, have invented certain new and useful Improvements in Paring Knives, of which the following is a specification.
This invention relates to improvements in I the construction of paring knives for fruit and vegetables; and has for its object to provide a knife of this character provided with a blade preferably formed of a single piece of sheet metal into substantially concavo-convex shape in cross section,the blade having an elongated, open-sided slot extending along its body portion, one edge of the slot being sharpened and offset outwardly from the plane of the opposite or guard edge thereof whereby when the slot becomes clogged it may be readily cleared by inserting the thumb of the handholding the handle outwardly along the blade to force the clogging material out through the end of the slot.
A further object of this invention is forming the blade with angular sides along its length for the purpose of stiffening the blade against bending and permitting it to be made of very thin metal. I I
A further. object of the invention is rounding and sharpening the end of the blade whereby it may be forced through the center of an apple to remove its core or for cutting into vegetables to remove blemishes therefrom.
lVith these and other objects in view, the invention consists of certain novel features of construction, as will be more fully. described, and particularly pointed out in the appended claims.
In the accompanying drawings Figure 1 is a top view of aknife showing the blade provided with an open-ended slot and illustrating the shank of the blade as held in the handle shown partly in section.
Figure 2 is a section on line 22 of Figure 1 showing the angular shape of the sides of the blade; also showing one edge of the slot as turned outwardly beyond the plane of the opposite or guard edge thereof.
Figure 3 is a sectional side elevation taken on line 33 of Figure 1.

With reference to the drawings, 10 designates the blade of my improved paring knife which is preferably formed of sheet steel, the blade proper being preferably of a'length substantially that of the ordinary thumb and the blade being struck into conoavo-convex shape with "its end 11 being preferably sharpened whereby the blade may be forced through an apple to remove be forced into blemishes in vegetables to remove the same.
This blade is providedwith a slot 12 formed substantially the length of the blade, the slot being-open at its outer end as at .13, the blade at the inner end of this slot being provided with an elongated, transverse opening 14 and, one edge 15 of this slot is sharpened and turned or bent out- ;wardly from the plane of the opposite or guard edge 16 whereby this edge 16 serves to limit the depth of cut of the paring or projecting edge 15. One edge 17 of this blade may also be sharpened if desired to be used as an ordinary cutting edge.
In. order to stiffen this blade, I have pro-t vided the same with angular side walls, that -is afsomewhat sharp angle 16 isformed in each of the side walls of the blade which serves to greatly stiffen the blade to permit it to be formed of stock much thinner than could otherwise be used.
This blade is provided with a shank 19 formed broad at its inner end 20 to extend into the handle 21 to prevent the blade from turning in the handle;

My improved knife is very simple and practical and inexpensive in construction and effective in its operation and by itsuse vegetable-s may be pared with the minimum amount of waste, the end of the blade may be used for removing blemishes in the vegetables and the cutting slot may be readily cleared by a simple movement of the thumb when clogged.
The foregoing description is directed Solely towards the construction illustrated, but I desire it to be understood that I reserve the privilege of resorting to all the mechanical changes to which the device is susceptible, the invention being defined and limited only by the terms of the appended claims.
I claim 1. A paring knife comprising a blade formed of a single piece ofsheet metal of substantially concavo=convex shape in cross section and having "a slot running lon'gi tudinally'of theblade and through one of its ends, one of the edges of the blade adjacent the slot lying in a different plane from the edge of the blade adjacent the opposite edge of the slot.

A lpa'ring knife comprising a blade formed of a single piece of sheet metal of substantially concavo-c-onvex shape in cross section and having an open ended slot at approximately the median line thereof and extending longitudinally of the blade, the edge of the blade'adjacent one side of the slot lying in a different plane from the edge of the blade adjacent the opposite side of the slot, one of said edges being sharpened, strengthening portions of the blade lying between the slot and the outer edges of the blade.
3. A paring knife comprising a blade formed of a single piece of sheet metal of substantially concavo-convex shape in cross section and having an open ended slot approximately along the median line of the blade with the edge of the blade adjacent one side of the slot lying in a different plane fronrthe edge of the blade adjacent the opposite edge of the slot the outer end of the blade being formed arcuate and sharpened into a cutting edge.

A paring knife comprising a blade formed of a single piece of sheet metal of substantially concave-convex shape in outline, having a slot extending longitudinally thereof and through one end, one of the edges of the blade adjacent the slot lying in adifi'erent plane from the edge of the blade adjacent the opposite edge of the slot, a portion of the blade lying between the slot and the outer edges of the blade being angularly formed and the outer'cdges of the blade sharpened.
5. A paring knife comprising a blade formed of a single piece of sheet metal and having a slotextending longitudinally thereof and through one end, one of the edges of of'the bla'de'adjacent the slot lying in a different plane from the edge of the blade adjacent the opposite side of'the slot, the first named edge being sharpened to form a cutting edge,'the bladehaying angular portions extending longitudinally thereof and intermediate the slot and'the outer edges of the blade, said outer edges being also sharpened to form a cutting edge.
