COOKING APPARATUS.

Be it known that I. ALrnnD M. DEMUTH, a. citizen of the United States, residing at Chicago, in the county of Cook and State of illinois, have invented certain new and useful Improvements in Cooking Apparatus, of which the following is a specification.
In cooking apparatus of the character embodying a `hermetically sealed cooking chamber in which the articles of food are cooked by pressure of the steam or vapor generated within the chamber, it is necessary to provide fastening devices for the cover or closure to prevent the same from being displaced by the pressure within the chamber.
The fastening devices heretofore employed embody wing nuts c'arried upon bolts or screws pivotally connected with the wall of the chamber. After the nuts have been adjusted to secure the closure in position and after the cooking operation has proceeded for a short time, the nuts and bolts become very hot, causing the parts to swell and to bind upon each other, with the ree sult that it is very difficult to loosen them for the purpose of removing the closure. Oftentimes it is necessary to employ an implement for that purpose and in many instances the hands of the operator have become badly burned. Furthermore it has heretofore been necessary to place the cover upon the vessel in a particular position before the securing means can be operated or Iadjusted.
It is one of the objects of the present invention to provide an improved fastening means for the closure, which may be readily adjusted under all conditions and thereby permit the closure to be readily and quickly removed, without necessitating the use of an implement and also obviating the danger of the. operator burning his h'ands, at the same time provide an improved closure which may be placed upon the vessel in any position, the fastening means being operative in any position of the closure upon the vessel.
A further object is to provide iinproved construction of bottom which will protect the contents of the vessel and which will also not interfere with nor impair or retard the cooking operation.
To the attainment of these ends, and the accomplishment of other new and useful objects as will appear, the invention consists in the features of novelty in substantially the construction, combination and arrangement of the several parts, hereinafter more fully described and claimed and shown in the accompanying drawing illustrating this invention, and in which- Figure 1 is a side elevation of an improved apparatus of this character constructed in accordance with the principles of this invention with parts broken away.

Figure 3 is an enlarged detail plan of a portion of the supplemental bottom.
Referring more particularly to the drawing the numeral 10 designates generally a cooking vessel, which may be of any desired size and configuration and constructed of any suitable material. Arranged beneath the bottom 11 of the receptacle and sp'aced therefrom a supplemental' bottom 12, which may be constructed of any suitable material and is so shaped that there will be provided a dead air space 18 between the bottom 11 and the supplemental bottom 12. rIhisinay be accomplished in any suitable manner but preferably by means of a flange 1li, which encompasses the supplemental bottom 12, and projects for the desired distance thereabove. llVhen in position the free edge of the flange 1d abuts the lower face of the bottom 12 to hold the supplemental bottom s aced from the bottom 11. rf'his supplemental, bottoni 12 may be secured in position in any suitable manner preferably by means of suitable fastening devices 15, which pass through a fianged portion 16 projecting below the bottom of the vessel. These fastening devices 15 are preferably in the form of screws which enter threaded aperture-s 17 opening through the outer face of the flange 14, and in order to provide sufhcient material or stock in which the threaded recesses 17 are formed, lugs or projections 18 may be formed on the inner face of the flange 1st.
The vessel 10 is open and encompassing the upper end thereof is a flange 19, the outer face 2O of which is beveled or inclined. One edge of the inclined portion 2() is substantially ush with the upper end of the wall of the vessel 10 and extends outwardly and downwardly therefrom and terminates short of the base of the flange 19 to form a circumferential shoulder 21.
The vessel is provided with a detached closure 22 of 'any desired configuration and is provided with an internal inclined face 23 adapted to engage and rest upon the inclined or beveled surface 2O of the vessel. A flange 21 may also be provided on the closure 22 to encompass the flange 19 and this Hange 24 co-operating with the shouldered portion 21 of the flange 19 serves as a means for positioning and guiding and locating the closure 22 in position.
The closure 22 is provided on its outer surface and adjacent the inclined surface 23 with a circumferentially disposed fiat bearing surface or shoulder 25, which is continuous and extends completely around the closure. This surface 25 is disposed in proximity to the inclined surface 2O of the flange 19 when the closure is in position. The inclined surface 2O on the vessel and the inclined surface 23 on the closure co-operate to guide the closure in position.
The closure is secured in position and against accidental displacement by means suitable clamps 26, one end of which projects between spaced ears 2T on the wall of the vessel 10 and is pivotally connected thereto by means of a pivot pin 23 passing' through the ears and through the end of the clamp member 26.
The other end 29 of the clamp member 26 is provided with screw threads therethrough which receives a. screw or bolt 30. Carried by the end of the screw or bolt is a head 31 having a flat surface adapted to engage and rest upon the fiat surface 25 of the closure. To the other end of the screw or bolt 30 is connected a handle 32 and the threads of the screw or bolt are of such a pitch that the member 30 will be quickly advanced or retracted with respect to vthe end 29 of the clamp 26, when it is rotated by the handle 32.
Any desired number of these clamps or fastening devices may be provided and by the provision of the circumferential flat surface 25 upon which the member 31 rest, and the arrangement of the co-operating inclined surface 20 on the vessel 10 and the inclined surface 23 on the closure 22, it will be manifest that the closure may be placed in position upon the vessel 10 in any desired position and rotated with respect thereto before the members 31 of the screws 3() are clamped against such surface. The clamp or fastening device 26 will be operative in any position of the closure upon the vessel as a portion of the flat surface 25 on the closure will always be in a position to be, engaged by clamps or fastening devices.
ff desired the closure may be provided with a pressure gauge 33, an air vent 34, and a safety blow off valve 35, all of any desired or well-known construction and which have communication with the interior of the vessel 10. Handles 36 may also be provided on the closure for lifting the same and suitable handles 37 may be provided on the vessel by means of which the vessel may be transported'.
By the provision of the inclined surfaces 2O and 23, which co-operate with each other and by the provision of the screws or bolts 36, it will be manifest that the inclined surface 23 may be forced over the surface 20, so as to form a fluid tight joint between the closure and the vessel. `When it is desired to remove the closure for any purpose, the screws 30 may be quickly rotated by a slight movement of the handles 32, to release the closure without danger of burning the hands of the operator and without necessitating the vuse of any implement to rotate the screws.
It will be noted that the handles 32 are connected with the ends of the screws 30 by means of au enlarged head or ball 32a and that the screws or bolts have extended bearings in the ends 29 of the clamp members 26. This construction is provided .not only for the purpose of providing weight at the end of the clamp and upon the screws, but also insures that the screw or bolt will not bind in its bearing but will insure a quick and easy movement of the screw without twisting the clamp member.
Vhile the preferred form of the invention has been herein shown and described, it is to be understood that Various changes may be made in the details of construction and in the combination and arrangement of the several parts, within the scope of the claim, without departing from the spirit of this invention.
What is claimed as new is A cooking vessel, the periphery of the vessel encompassing the upper end thereof being inclined or beveled and having a laterally projecting circumferential flange at the base of the said inclined portion, a closure for the vessel, said closure extending over and encompassing said beveled or inclined portion and also the said circumferential flange, a portion of the inner face of the closure spaced from the edge thereof being inclined to engage and rest upon the said beveled or inclined surface of the receptacle, a portion of the outer surface of the closure directly above the saidvinclined portion thereof being shaped to form an encompassing flat surface spaced from the peripheral edge of the closure, a plurality of clamping members pvoted to the receptacle und adapted to extend over the said at surface of the closure, a screw threaded through each of the clamping members and 'i hevno' an enlarged Het surface on the end thereof to engage the said Het surface of the closure. and e handle connected Wlth each of the said screws for operating it and for swinging the said clamping members about their pivots.
