The invention consists in improving cheesevats by the application of tapering ribs to the sides and ends of case so as to support the receiver, as hereinafter fully described.
A is the outer case or main body of the vat, in which the oth er parts are placed, and which is supported upon legs B of such a length as to raise the vat to a'convenient height. 0 is the pipe through which the steam comes from the generator, and which is divided into branches D E. The pipe D passes in through the end of the case A, and passes along the middle part of the bottom to or nearly to the other end of said case. The other pipe, E, passes beneath the bottom of the case A and enters at or near its other end, where it divides into two branches, which pass along the angle between the bottom and the sides and ends of the case A and terminate at or near the pipe D at the other end of the said case. The pipe D upon its opposite sides, and the pipe E upon its inner and upper sides, either or both, have numerous small holes formed in them, through which the steam escapes into the vat in nu merous small streams. To the bottom of the case A are attached blocks F, of a thickness a little greater than the diameter of the pipes of the said receiver. The upper edges of the sides and ends of the receiver H are securely attached to the frame J, which fits and rests upon the edges of the case A, as shown in Figs. 3 and 4, and which has handles formed upon its ends to enable the receiver H to be conveniently removed and inserted. The receiver H is made tapering, as shown in Figs. 3 and 4, to leave a space between its sides and ends and the sides and ends of the case Afor the steam. K are tapering blocks or ribs attached to the sides and ends of the case A for the sides and ends of the receiver H, to rest against, so that they cannot spring from the weight of the milk, thus preventing its seams from being injured or opened by said spring ing or bulging. The pipes D E are provided with stopcocks L to enable the steam to be admitted into both or either or neither of said pipes, as may be desired, and in any desired quantity.
Having thus described my invention, I claim as new and desire to secure by Letters Patent- The tapering blocks or ribs K attached to the sides and ends of the case A to support the sides and ends of the milk-receiver H, substantially as herein shown and described, and for the purpose set forth.
