To all whom t may concern:
Be it known that I, BoLnsLiw HoLowNrA, a citizen of Russia, residing at Syracuse, in the county of Onondaga and State of New York, have invented certain new and useful Improvements in Knives, of which the following is a specification.
The primary object of the invention is the provision of a knife adapted for paring fruits and vegetables by hand, the depth of cut being readilj,7 adjustable for rendering the same uniform. V
A further lobj ect of the invention is to provide a paring knife having an adjustable guard whereby the thickness of the severed portion of the article operated upon may be uniform and regulated at will, the structure being light in weight and possessing great utility.
A still further object of the invention is the provision of a guard for any form of cutting blade so arranged as to be easily and qickly secured in its adjusted position suita le for the required operation, the device being simple in construction and easy to manufacture.
With these general objects in view, the invention consists of the novel combination and arrangement of parts hereinafter fully described in connection with the accompanying drawing and in which like reference characters designate corresponding parts throughout the several views.
Figure 1 is an elevational view of the invention showing one flat side of the cutting blade with the guard illustrated by dotted lines in its operative position. v

however, that the invention may be employed upon other forms of knives and cutters.
The blade 10 has a longitudinal cutting edge 12 while a disk 13 is eccentrically pivoted within a side slot 141 at the point of connection between said blade and handle by means of a suitable pin 15. The free end of the blade 10 is provided with a curved point 16 serviceable for extracting cores or seeds as well as being convenient for various other uses. A roller 17 is concentrically journaled adjacent the free end 18 of the blade 10 within a side notch 19 of the blade by means of 'a pin 20.
The pins 15 and 20 are positioned in axial alinement with each other and a substantially U-shaped guard 21 connects the disk 13 with the "roller 17 whereby the guard may be swung into close proximity to the cutting edge'12 when desired as best illustrated in Fig. 6 of the drawings as well as swung away fromsaid cutting edge in an arcuate path upon the journaling pins 15 and 20. It will be seen that the guard 21 will be positioned at all times parallel to the cutting edge 12.
A retaining screw 25 is longitudinally carried by the handle 11, being threaded through lugs 22 upon one side of the handle while the free end 23 of the screw is rounded for frictionally engaging the disk 13 when the guard 21 is positioned at the desired adjustment. A knurled head 24 upon the outer free end of the screw 25 outwardly of the handle 11 is readily grasped for turning the screw 25 for either engaging the disk 13 or releasing the same.
The complete operation of the invention will be apparent from this detail description thereof., the guard 21 being secured in adjusted position by the screw 25 for cutting the desired thickness of material, the handle 11 is grasped and the blade 10 is employed for forcing the cutting edge 12 through the article operated upon, such as a potato or an apple which is being pared by the operator. The guard 21 may be swung rearwardly of the blade 10 when not desired for use, leaving the cutting edge 12 free and clear for employment in cutting articles while the guard 21 may be swung farther around and secured in adjustment adjacent thel opposite side of the cutting edge 12 from that illustrated in Fig. Y 4, although at such times the guard'is incapadifferent distances fromftlie cutting edge 1.2,

What I claim as new is:
1. A device of the class described comprising; a blade having a cutting edge, a disk e ferent distances eccentrically journaled adjacent one end of the blade,
a guard for said edge attached to the disk and adapted for adjustment at diffrom said edge and adjust ment retaining means for the disk. i' Y 2.
