GAGE-KNIFE.

SPECIFICATION forming part of Letters Patent No. 602,758, dated April 19, 1898.

Be it known that I, GEORGE M. LANDERS, a citizen of the United States, residing at Brocton, in the county of Edgar and State of Illinois, have invented certain new and useful Improvements in Gage-Knives; and I do hereby declare the following to be a full, clear, and exact description of the invention, such as will enable others skilled in the art to which it appertains to make and use the same.

This invention relates to an improved gageknife designed particularly for use in paring and slicing fruit, vegetables, or the like; and it consists in a handle provided with a fixed gage-plate of a peculiar construction designed to constitute a gage for a movable knife and to be employed for the purpose of paring the vegetable around the stem, where it is impossible for the ordinary knife to go, and for the purpose of removing defective or decayed spots.

The invention consists, further, in provid ing said movable knife employed in connection with the gage with mechanism by means of which the knife with respect to the gage may be adjusted to suit the work to be performed with the device.

Referring to the drawings, Figure 1 is a side elevation of my gage-knife. Fig. 2 is a top plan view thereof. Fig. 3 is a perspective view of the knife detached. Fig. 4 is a similar view of the gage.

Referring to the numerals on the drawings, 1 indicates a handle of any suitable form or material, from the end of which projects a gage-plate 2, having its end slightly curved and concaved to substantially spoon shape and pointed, as indicated at 3, for the purpose of permitting the gage to be employed for the purpose of paring the vegetable within the cavity surrounding the stem or to facilitate the removal of decayed spots, which operations cannot ordinarily be performed with a paring-knife.

posite the knife and designed in addition to its function as a guide for the adjustmentbolts 5 to retain the knife-adjusting disks 8, provided with internal screw-bores 9, designed for the reception of the screw 5 and located intermediate of the gage 2 and plate 9. The knife-adj usting disks 8 are preferably provided with knurled or otherwise roughened peripheries, and it will be observed that in practice when said disks are rotated in one direction or the other they will cause the adjustment-bolts 5 to be adjusted longitudinally, thereby regulating the relation of the knife 4 with respect to the gage 2 to permit the use of the gage-knife in connection with vegetables or fruits having rinds of varying thickness.

The knife 4 may be of any suitable form, but is preferably rectangular, as illustrated, and is beveled from its front edge 10 to a point adjacent to its back.

While the present embodiment of my invention appears at this time to be preferable, I do not desire to limit myself to the details of construction herein shown and described, but reserve the right to change, modify, or vary the same at will within the scope of my invention.

Having thus described my invention, what I claim as new, and desire to secure byLetters Patent, is

1. In a device of the character described, the combination with a gage provided upon one extremity with a handle and upon its opposite extremity with a spoon end, of a knife located upon one side of the gage, a guideplate located upon the opposite side of the gage, knife-adjusting screws secured to the knife adjacent to its opposite end and extending through the gage and guide-plate respectively, and knife-adj usting disks carried upon the screws and located intermediate of the gage and guideplate, substantially as speci fied.

2. In a device of the character described, the combination with a gage provided upon one extremity with a handle and upon its opposite extremity with a spoon end, of a knife located upon one side of the gage, a guideplate located upon the opposite side of the gage and provided with angular ends fixedly secured thereto, adj usting screws adjacent to opposite ends of the knife and passing through the gage and guideplate respectively, and adjusting-disks internally screw-threaded and engaging threads upon the adjustingserews, said disks being located between the gage and guide-plate and having their edges projecting beyond the sides of the latter, substantially as specified.
