IMPROVEMENT IN INSTRUMENTS FOR EXTRACTING AIR FROM FRUIT-JARS.
Specification forming part of Letters Patent No. 124,758, dated March 19, 1872.
Specification describing a new and useful Improvementin Instrumen t for Extracting Air from Fruit-Jars, invented by JOHN H. PAR- RISH, of Talladega, in the county of Talladega and State of Alabama.
The invention relates to and consists in a peculiar construction of a perforator, whereby air is expelled. from fruit-cans, and will first be fully described and then clearly pointed out in the claim.
In the accompanying drawing, Figurel represents a. vertical section of a fruit-jar or bottle, showing the perforator inserted, but of larger size than is required for use. Fig. 2 is a cross-section of Fig. 1, taken on the line 00 00.

A is the tubular perforator. B is the cork. O is the fruit-jar. From the point 'D, the perforator is a tube up to or near the handle E. G is an orifice through which the air enters, and H is an orifice through which the air escapes. The perforator is passed through the cork B, and the cork is inserted into the neck of the jar as seen in the drawing, but the orifice G may extend only a little way through the cork. When the jar, with the cork and perforator inserted, is placed in the water, and
the contents are brought to the boiling temv material or substance.
With the use of this perforator, the fruitpreserving jar is cheaply made. The process or operation of putting up fruit or vegetables is rendered very simple, and the result is equaled only where the best and most perfect fruit-preserving vessels are used.
Havingthus described my invention, I claim as new and desire to secure by Latters Patent- As an article of manufacture, the tubular perforator A, having a solid sharp point, D, and a tube above with side apertures G H, as and for the purpose described.
