CURING APPARATUS FOR MEATS.
Specification of Letters Patent.

To all whom it may concern:
Beit. known that we, ALADAR Senses? and SERBAN RriMUsz, subjects of the King of Hungary, residing at South Bethlehem,
' in the county of Northampton and State of Pennsylvania, have invented certain new and useful Improvements in Curing Apparatus for Meats, of which the following is a specification, reference being had therein to the accompanying drawing.
This invention relates to a curing apparatus for meats, and has for its object to provide an apparatus for such purpose with means, in a manner as hereinafter set forth, to reduce the temperature of the smoke prior to the supply thereof to the curing compartment, under such circumstances obtaining an unusually satisfactory product.
Further objects of the invention are to provide a curing apparatus, which is comparatively simple in its construction and arrangement, strong, durable, efiicient and convenient in its use, readily set up and comparatively inexpensive to manufacture.
With the foregoing and other objects in view, the invention consists of'the novel construction, combination and arran ement of parts as hereinafter more speci cally described and illustrated in the accompanying drawings, wherein is shown an embodiment of the invention, but it is to be understood that changes, variations and modifications can be resorted to which come within the scope of the claims hereunto appended.
In the drawings, wherein like reference characters denote corresponding parts throughout the several views :Figure 1 is a perspective .view (3f a curing ap aratus in accordance with thls invention, i 2 ,is, a. top plan, part1 in section, Fi 3 IS a sectional detail the smoke coo er, Fig. 4 is a vertical sectional view of the curing compartment, Fig. 5 is a cross sectional view through the smoke conducting pipes and smoke cooler, and Fig. 6 is an enlarged sectional plan of the smoke conducting pipes and smoke cooler.
Referring to the drawings in detail, 7 denotes a' smoke generator which may be of any suitable construction and which is provided with a smoke discharge pipe 8, which opens into a horizontally disposed coupling pipe 9, the latter having connected thereto, as well as communicating therewith, a pair of longitudinally extending parallel smoke conducting pipes and 11. The coupling pipe 9 is arranged at one end of the pipes 10 and 11, while the other ends of said pipes are connected to and communicate with a horizontally disposed coupling pipe 12, the latter having communicating therewith a smoke supply pipe 13, which has its free end upturned as at 14. The pipe 13 is provided with a regulator 13 for controlling the supply of smoke through said pipe to a curing chamber to be presently referred to.
The reference character 15 denotes a base plate provided with a pair of uprights 16 and each of said uprights 16 terminates in a semi-circular support 17 'for one ofthe smoke cooler sections.
The smoke coolcris formed of two sections and each section consists of an elongated cylindrical casing 18, of greater diameter than the smoke conducting pipe and each casing 18 surrounds a smoke conducting pipe for a portion of its length. The end of each casing 18 is connected to a smoke conducting pipe-by a head 19. The diameter of the casing with respect to the smoke conducting pipe is such as to provide a water chamber 21, and in each of the chambers 21 is supplied a body of water 22 for cooling 1 the smoke as it travels through the conducting pipes 10 and 11. Each of the casings is provided with a depending outlet pipe 23, which are connected togetherby angular coupler 24, the latter being provided with a draw-off cook 25.
Each of the casings 18 has its top, near one end, provided with an inlet nipple 26 and connected to each nipple 26 is a filling pipe 27. The filling pipes .27 are connected together at their upper ends by an inverted T-coupling 28 having the vertical leg thereof provided with a funnel-shaped mouth piece 29, which is formed with interior threads 30 for the purpose of detachably connecting thereto a closure plug 31.
The apparatus further includes a casing consisting of a bottom 32, a front wall 33, rear wall 34, a pair of side Walls and 36, and a to 37. The top, side walls, front and rear wafl are suitably secured together and the bottom 32 is flanged as at 38. The front, rear and side walls are secured to the flange 38 by holdfast devices 39. The front, rear and side walls are extended to provide supporting le s 40 whereby the bottom 32 is elevated. he casing forms a curing chamber 41, and hooks 42 and 43 are su ported from the chamber for suspending t e articles to be cured within the chamber 49.
The front wall 88 is provided with a pair of door openings and the said openings are closed through the medium of a pair of hinged, doors 44 and 45, which are hinged to the said front wall. The door openings formed in the front wall provide a separating bar 46 for the doors 44 and 45 when these latter are closed. r
The supply pipe 13 extends through the side wall 35, near the lower end thereof, and has its free end positioned within the chamber 41, centrally thereof and arranged over the upturned end 14 of said supply pipe 13 is a baifle plate 47, which has an arm 48 fixedly secured to the inner face of the rear wall 34 by the holdfast devices 49, and said bafiie plate 49 is utilized for deflecting the smoke throughout the chamber 41. The top 37' has connected thereto a chimney 50.
What we claim is 1. A meat curing apparatus comprising a smoke generator having a smoke discharge pipe, a pair of smoke conducting pipes, a coupling pipe for establishing communication between said conducting pipes and said discharge pipe, means to provide a curing chamber, a smoke supply pipe extending into said curing chamber, a coupling pipe for establishing communication between said supply pipe and said conducting pipes, and smoke coolers surrounding said conducting pipes and provided withinlets and outlets.

A meat curing apparatus comprising a smoke generator having a smoke discharge pipe, a pair of smoke conducting pipes, a coupling pipe for establishing communication between said conducting pipes and said discharge pipe, means to provide a curing chamber, a smoke su ply pipe extending into Said curing cham er, a coupling pipe for establishing communication between said supply pipe and said conducting pipes, smoke coolers surrounding said conducting miaisa pipes and provided with inlets and outlets, said supply pipe having an upturned end arranged in said curing chamber, and a bafile arranged withinsa-id curing chamber through said upturned end.

A meat curing apparatus comprising a smoke generator having a smoke discharge pipe, a pair of smoke conducting pipes, a coupling pipe for establishing communication between said conducting pipe and said discharge pipe, means tov provide a curing chamber, a smoke supply pipe extending into said curing chamber, a coupling pipe for establishing communication between said supply pipe and said conducting pipes, smoke coolers surrounding ,said conducting pipes and provided with inlets and outlets, and means for controlling the supply of smoke through said pipe to said curing chamber.

A meat curing apparatus comprising a smoke generator having a smoke discharge pipe, a pair of smoke conducting pipes, a coupling pipe for establishing communication between said conducting pipes and said discharge pipe, means to provide a curing ciamber, a smoke supply pipe extending into said curing chamber, a coupling pipe for establishing communication between said supply pipe and said conducting pipes, smoke coolers surrounding said conducting pipes and provided with inlets and outlets, said supply pipe having an upturned end arranged in said curing chamber, a baflie arranged within said curing chamber through said. upturnedend, and means for controlling the supply of smoke through said supply pipe to said curing chamber.
