To all whom it may concern:
Be it known that I, ARTHUR ABEL, a citizen of the United States, residing at Tarrytown, in the county of WVestchester and State of New York, have invented new and useful Improvementsin Knives, of which the following is a specification.
The present invention provides an implement particularly designed for preparing vegetables for cooking, said implement being in the nature of a knife whereby vegetables, fruits and the like may be pared and sliced or shaved.
The purpose of the invention is the provision of an implement of the nature set forth combining a knife blade and a bit, the latter being adjustable to regulate the thick-' ness of the skin to be removed from the vegetable or to admit of varying the thickness of the slice or shaving.
The invention consists of the novel features, details of construction and combination of parts, which hereinafter will be more particularly setforth, illustrated in the accompanying drawing, and pointed out inthe appended claim.
Referring to the drawing, forming a part of the application, Figure 1 is a front view of a knife embodying the invention. Fig. 2 is a perspective view of the blade stripped of the handle, bit and means for securing the bit to the blade. Fig. 3 is a transverse section on the line w-m of Fig. 1. Fig. 4 is a perspective view of the stud. Fig. 5 is a perspective view of the spring lock or clamp.
Corresponding and like parts are referred to in the following description, and indicated in all the views of the drawing, by the same reference characters.
The implement comprises a blade and a handle 1, the blade preferably consisting of a strip of steel having a shank 2 at one end, a knife blade 3 at the opposite end and an intermediate portion constructed to form a support for a bit 4, which is adjustable for varying the thickness of the slices, shavings or parings. The component parts of the blade are in a straight line and substantially in the same plane. The knife blade 3 may be used in the ordinary manner of a paring knife. The shank 2 provides convenient means for securing the blade to the handle 1. The intermediate portion of the blade has a longitudinal slot 5 through which the cutting edge of the bit4projects. The part 6 below the slot 5 forms a guard'and is set at an inclination to the plane of the knife blade and its outer surface is made rounding to ride upon the article being out. The part 7 above the longitudinal slot 5 constitutes a bit support and inclines in an opposite direct-ion to the guard 6 and to the plane of the knife blade. Ears 8 at the ends of the bit support 7 extend infront of the bit and retain the latter in place and direct it in its vertical adjustment. The guard 6 is located wholly in advance of the cutting edge of the bit 4. An opening 9 is formed in the bit support 7 and receives a stud 10 which is headed at one end to limit its movement when placed in position in the opening 9. Notches 11 are formed in opposite sides of the stud 10 and receive the legs 12 of a spring lock or clamp 13 by means of which the bit 4 is held in the located position. The bit support 7 projects above the back of the knife blade so as to present ample supporting surface for the bit 4 to retain the same in proper position.
As stated the implement is formed of a strip of steel and when stamped out the widened part 7 has the ears 8 at its ends projecting. These ears being bent back parallel with the part 7 to form the guides for the bit, thereby resulting in a structure which is practical and capable of being cheaply manufactured.
The bit 4 consists of a blade having its lower edge beveled from one side after the fashion of the bit of a plane. A slot 14 is formed in the bit 4 to receive the projecting end of the stud 10. The bit is seated upon the support 7 and is retained in place by means of the ears 8.
The spring lock or clamp 13 is curved in its length and has a centrally disposed slot- 15 forming the legs. 12, said slot receiving the projecting end of the stud 10 and the inner edge portions of the legs 12 bordering upon the slot 15 entering the notches 11 of the stud 10, whereby the lock is held in place. A roll 16 is formed upon the upper or outer end of the spring lock and constitutes a grip to facilitate the adjustment of the look when required. When the lock 13 is drawn outward the bit 4 is released and may be adjusted so as to project to a greater or less extent through the longitudinal slot 5, thereby regulating the thickness of the arings or slices. After the bit has been adjusted the lock 13 is pressed inward and binds upon the bit by a wedging action, this being due to the longitudinal curvature of the lock and the engagement of its legs 12 with the notches of the stud 10.
From the foregoing description, taken in connection with the accompanying drawing, the advantages of the construction and of the method of operation will be readily apparent .to those skilled in the artto which the invention appertains, and while I have described the principle of operation of the invention, together with the device which I now consider to be the embodiment thereof, I desire to have it understood that the device shown is merely illustrative, and that such changes may be made when desired as are within the scope of the claim appended hereto.

lower portion of the blade being rounding upon its under side, a handle fitted upon the shank of the blade, a bit placed upon the support and slidable in the said guides, and means for securing the bit to the blade and admitting of adjustment of the bit to project the edge thereof through the longitudinal slot of the blade to a greater or less extent.
