Abstract

The invention relates to production of alcohol beverages. A method provides for gradient-continuous growing of yeast on nutrient medium, containing molasses as a carbon source, in three stages under aeration conditions, separation of molasses into two parts and recirculation of the medium from the third stage to the first one. Molasses separation is performed in the ratio of 1:2, at that the lesser part is dissolved with water to the concentration of 2.0-2.5% CB and is introduced into the first part of the growing, and the larger part is supplied by equal portions into the second and third stages of growing.
