A method for obtaining fresh soft cheese comprises accepting and preparing raw material, cleaning, normalizing, clotting the milk and treating the curd, salting, forming and self-pressing of cheese mass, packing. Then hermetic packing of the cheese curd into a film after the self-pressing stage and treating thereof with high pressure are carried out. For this purpose the packed cheese is submerged into the working liquid filling a working chamber of a high-pressure unit and it is treated with a pressure of 450-580 MPa at a temperature of 18°C in the course of 20-30 minutes.
