Abstract
A method for making dietic bread includes wheat grain soaking in water, preparation of sponge with introduction of flour, yeast suspension, kneading dough, its fermentation, handling, proving and baking. Prior to soaking grain is rolled on smooth rollers up to formation of flakes, soaking flakes is carried out as mixing with water, the formed mixture is cooled and yeast suspension is added to the mixture.
