Abstract
A method of making half-finished spice-cakes, including making an emulsion by means of mixing mélange, ammonia bicarbonate, soda, a dry aromatizer and a sweet component, introducing the obtained emulsion into flour, dough kneading, processing thereof and baking half-finished products with invert syrup used as the sweet component, and the emulsion is added to the mixture of high grade wheat flour and barley malt flour.
