A process for the preparation of pectin extract involves hydrolysis of pectin substances followed by extraction of pectin is characterized in that hydrolysis is carried out in alkaline medium at pH 8-12 for 1-100 min. at room temperature with subsequent extraction and neutralization of pectin extract to pH 4.0-7.0.
