The method of wort distillation provides for heating of water in a boiler room prior to its transfer in a vaporous state, steam supply in a distillation column and brew, wort distillation with a receipt of wash distillate and stillage, steam-ejection cooling with steam formation and using it in mixture with the steam given in a distillation column, for heating thereof. A stillage is cooled by water, and a water is subjected to steam-ejection cooling, at that the closed heating of distillation column is conducted, and formed steam condensate in a boiler room is given.
