Винахід стосується способу контролювання концентрації небажаних мікроорганізмів у водному розчині, який застосовується у процесі ферментації, який передбачає включення ферментованого вуглеводу до водного розчину, включення принаймні одного виду дріжджів до розчину, включення екстракту хмельової кислоти до розчину та включення принаймні однієї органічної кислоти або її солі, вибраної із групи, яка складається із лимонної кислоти, бензойної кислоти, пропіонової кислоти або їх солей до розчину, та де небажаним мікроорганізмом є бактерії, що продукують молочну кислоту.
