Description
本發明有關藉由最佳化(optimization)的演算法,在兼顧產品品質及成本最佳化配方(least-cost formulation)之條件下,來尋找並製備適合不同營養需求的液態營養調配物的方法。
一般營養的攝取來源為食品,但由於現代人生活飲食習慣不良,長期處於飲食不均衡的情況下,造成身體生成許多慢性疾病,因此現代許多飲食建議指南一直在強調均衡膳食的重要性。但即使可確實做到均衡飲食,仍有部分營養素難以由一般的飲食中獲得,且老年人和嬰幼兒的咀嚼及消化功能不佳,更容易產生營養攝取不均的現象,故隨著近年來營養科學的發展,許多用於補充人體所缺乏營養素的營養補充品應運而生。一般而言,營養補充品的主要成分包括蛋白質、醣類及脂肪,其尚可包含身體代謝所必需之微量元素及維生素。
過往的營養補充品多是呈粉狀形式,食用前須先用熱水沖泡再飲用。然而此種服用方式並不方便,且往往難以控制攝取份量而進一步造成營養攝取不當的現象。因此液態營養補充品漸漸受到消費者青睞,近年來也較多類似的液態營養品出現在市面上。
然而液態營養補充品為含有複雜成分的溶液系統,且這複雜的成分也各具有不同的特性。例如大豆蛋白不易溶解;乳清蛋白雖容易
溶解卻也容易變性;酪蛋白雖相對熱穩定,卻會隨著濃度的提高而增加黏度;蛋白質彼此間會產生聚合(polymerization)或聚集(aggregation)、沉澱(precipitation)、絮凝(flocculation)及凝結(coagulation)等複雜的反應;醣類有增稠、甜度、部分難溶(如纖維)及褐變等問題;及脂肪則會造成乳化、浮油、氧化及油耗味等現象。因此在製備液態營養品時,往往需以嘗試錯誤法(trial-and-error)進行調配並不斷修改配方,而造成人力、時間及原料的大量耗費。因此本技術領域仍需要可以快速評估產品特性,減少產品開發時間及成本的技術手段。
本發明之目的係提供一種製備液態營養調配物之方法,其係藉由最佳化演算法,來尋找並製備具有品質及成本最佳化配方的液態營養調配物。
本發明係使用品質及成本最佳化配方數學模式,其包括目標函數(objective function)與限制函數(constrain functions)。目標函數即為價格函數,即各成分的價格與含量比率乘積的總合。限制函數則包括營養需求限制函數、產品品質限制函數及製程條件限制函數等,每一限制函數得有一限制低標或限制高標以介定限制標準。限制函數的建立乃利用統計迴歸(statistical regression)法將實驗數據迴歸一次或二次多項式。品質及成本最佳化配方的演算,得依限制函數為一次或二次多項式,選擇適當的數學演算法,分別為線性數學規畫(linear programming)或非線性數學規畫(non-linear programming)。品質及成本最佳化配方的演算,可尋找符合不同營養需求,產品品質及製程條件下的最便宜的配方,減少配方的成本。品質及成本最佳化配方的演算亦可預測配方成分價格,營養需求,產品品質及製程條件對品質及
成本最佳化配方的影響,調整品質及成本最佳化配方,減少開發配方所需的時程。
據此,本發明提供一種製備液態營養調配物之方法,其中該液態營養調配物包含下列組成分:水、酪蛋白鈉、酪蛋白鈣、大豆蛋白、乳清蛋白、糊精、糖漿、纖維、植物油、中鏈甘油三酯(MCT)、大豆卵磷脂及增稠劑,且該方法包含:(1)提供該等組成分之一或多種重量百分濃度比例組;(2)藉由下列公式計算並預測該一或多種重量百分濃度比例組的性狀特徵,其中該性狀特徵係選自黏度、pH、滲透壓、沉澱量、浮油量、蛋白質總量、醣類總量、脂肪總量及其任意組合所組成之群:黏度=-0.33+3.9*酪蛋白鈉重量百分濃度+5.28*酪蛋白鈣重量百分濃度+0.63*糊精重量百分濃度+0.91*糖漿重量百分濃度、pH=(6.78-4.04*酪蛋白鈉重量百分濃度-0.67*糊精重量百分濃度+102.16*增稠劑重量百分濃度-2.65*糖漿重量百分濃度-2.65*纖維重量百分濃度-15.6*中鏈甘油三酯重量百分濃度)/0.97、滲透壓=(-215.89+5599.83*大豆重量百分濃度+3558.78*酪蛋白鈣重量百分濃度+2246.47*糊精重量百分濃度+4150.67*糖漿重量百分濃度+3348.88*纖維重量百分濃度)/1.21、沉澱量=0.05+3.8*大豆重量百分濃度-42.09*增稠劑重量百分濃度、浮油量=0.05+2.26*植物油重量百分濃度、蛋白質總量=大豆重量百分濃度+乳清重量百分濃度+酪蛋白鈉重量百分濃度+酪蛋白鈣重量百分濃度、醣類總量=糊精重量百分濃度+增稠劑重量百分濃度+糖漿重量百分濃度+纖維重量百分濃度、及

為達到改善品質之目的,本發明之方法尚可包含步驟(5):根據步驟(4)製備而得的液態營養調配物之性狀特徵,進一步調整酪蛋白鈉、酪蛋白鈣、大豆蛋白、乳清蛋白、糊精、糖漿、纖維、植物油、中鏈甘油三酯、大豆卵磷脂及/或增稠劑之重量百分濃度比例,且另製備一或多種液態營養調配物。
根據本發明之方法,步驟(1)中酪蛋白鈉、酪蛋白鈣、大豆蛋白、乳清蛋白、糊精、糖漿、纖維、植物油、中鏈甘油三酯、大豆卵磷脂及增稠劑之重量百分濃度比例組合,可依液態營養調配物所欲提供營養需求的態樣做任意的設計。
本發明中之大豆蛋白可為,但不限定為大豆蛋白、大豆水解蛋白、豌豆蛋白、大豆分離蛋白及其任意組合。本發明中之酪蛋白鈉及酪蛋白鈣可為,但不限定為酪蛋白鈉、酪蛋白鈣、部分水解酪蛋白鈉及其任意組合。本發明中之乳清蛋白可為,但不限定為乳清蛋白、濃縮乳清蛋白、乳清蛋白水解物、牛奶分離蛋白、牛奶蛋白及其任意組合。本發明中之糊精可為,但不限定為麥芽糊精、難消化性糊精(為改質水溶性纖維,其中50%之纖維不會被人體消化吸收,又稱抗性糊精)、環糊精、澱粉及其任意組合。本發明中之糖漿可為,但不限定為麥芽糖漿、蔗糖、果糖、乳糖、葡萄糖、大豆多糖、水解玉米澱粉、麥芽糖醇及其任意組合。本發明中之纖維可為,但不限定為大豆纖維、菊糖纖維、果寡糖、半乳糖寡糖、穀類纖維、纖維素、甲殼
素、β葡聚醣、低聚糖及其任意組合。本發明中之植物油可為,但不限定為芥花油、葵花油、大豆油、玉米油、椰子油、橄欖油、棉籽油、棕櫚油、花生油、紅花籽油、芝麻油及其任意組合。本發明中之中鏈甘油三酯(medium chain triglycerides;MCT)係指含有6~12個碳原子碳鏈的脂肪酸與甘油酯化生成之脂肪酸甘油三酯。本發明中之增稠劑可為,但不限定為鹿角菜膠、阿拉伯膠、果膠、海藻酸鈉、羧甲基纖維素鈉、甲基纖維素、卡德蘭膠、結蘭膠及其任意組合。
根據本發明之方法,其中所製備之液態營養調配物中可進一步包含一或多種維生素及/或一或多種礦物質。該維生素可為,但不限定為維生素A、維生素B1、維生素B2、維生素B6、維生素B12、維生素C、維生素D3、維生素E、維生素K1、氯化膽鹼、葉酸、生物素及泛酸。該礦物質可為,但不限定為鈣、鐵、鉀、碘、氯、鎂、鋅、銅、錳、鉻、鉬、硒及矽,且該等礦物質係以鹽離子型態存在。
根據本發明之方法,步驟(2)中之該性狀特徵可進一步包含調配物價格,且該調配物價格係由下列公式所計算並預測:調配物價格=56.49*大豆重量百分濃度+110.29*乳清重量百分濃度+118.63*酪蛋白鈉重量百分濃度+141.23*酪蛋白鈣重量百分濃度+9.89*糊精重量百分濃度+209.28*增稠劑重量百分濃度+9.04*糖漿重量百分濃度+63.67*纖維重量百分濃度+32.15*植物油重量百分濃度+56.49*中鏈甘油三酯重量百分濃度+32.28*大豆卵磷脂重量百分濃度。
將營養調配物的組成分設定為11種因子,將該11種因子設計成如下表1所示之92種重量百分濃度比例組(其中組1為市售產物之配方)。除該11種因子外,該等營養調配物中尚固定包含0.139%(w/w)之維生
素及0.825%(w/w)之礦物質。將組成分中之粉料均勻混合後,加入75~85℃熱水,以攪拌機初步均質分散後,再加入油脂後高速均質。
測定水溶解均質後92組製備樣品之黏度、pH、滲透壓、沉澱量及浮油量,並計算92組製備原料價格。其結果如下表2所示。
將表2之結果數據進行統計回歸計算,並獲得下列方程式:1. 黏度=-0.33+3.9*酪蛋白鈉重量百分濃度+5.28*酪蛋白鈣重量百分濃度+0.63*糊精重量百分濃度+0.91糖漿重量百分濃度;2. pH=6.78-4.04*酪蛋白鈉重量百分濃度-0.67*糊精重量百分濃度+102.16*增稠劑重量百分濃度-2.65*糖漿重量百分濃度-2.65*纖維重量百分濃度-15.6*MCT重量百分濃度;3. 滲透壓=-215.89+5599.83*大豆蛋白重量百分濃度+3558.78*酪蛋白鈣重量百分濃度+2246.47*糊精重量百分濃度+4150.67*糖漿重量百分濃度+3348.88*纖維重量百分濃度;4. 沉澱量=0.05+3.8*大豆蛋白重量百分濃度-42.09*增稠劑重量百分濃度;5. 浮油量=0.05+2.26*植物油重量百分濃度;6. 全組成250ml價格=56.49*大豆蛋白重量百分濃度+110.29*乳清蛋白重量百分濃度+118.63*酪蛋白鈉重量百分濃度+141.23*酪蛋白鈣重量百分濃度+9.89*糊精重量百分濃度+209.28*增稠劑重量百分濃度+9.04*糖漿重量百分濃度+63.67*纖維重量百分濃度

於表3所示之條件下,設計10個重量百分濃度比例組,來驗證實例1所獲得方程式所計算結果與實際產品性狀特徵間之誤差。該誤差之驗證數據則提供於下表4中。

Claims (6)
- 一種製備液態營養調配物之方法,其中該液態營養調配物包含下列組成分:水、酪蛋白鈉、酪蛋白鈣、大豆蛋白、乳清蛋白、糊精、糖漿、纖維、植物油、中鏈甘油三酯、大豆卵磷脂及增稠劑,且該方法包含:(1)提供該等組成分之一或多種重量百分濃度比例組;(2)藉由下列公式計算並預測該一或多種重量百分濃度比例組的性狀特徵,其中該性狀特徵係選自黏度、pH、滲透壓、沉澱量、浮油量、蛋白質總量、醣類總量、脂肪總量及其任意組合所組成之群:黏度=-0.33+3.9*酪蛋白鈉重量百分濃度+5.28*酪蛋白鈣重量百分濃度+0.63*糊精重量百分濃度+0.91*糖漿重量百分濃度,pH=(6.78-4.04*酪蛋白鈉重量百分濃度-0.67*糊精重量百分濃度+102.16*增稠劑重量百分濃度-2.65*糖漿重量百分濃度-2.65*纖維重量百分濃度-15.6*中鏈甘油三酯重量百分濃度)/0.97,滲透壓=(-215.89+5599.83*大豆重量百分濃度+3558.78*酪蛋白鈣重量百分濃度+2246.47*糊精重量百分濃度+4150.67*糖漿重量百分濃度+3348.88*纖維重量百分濃度)/1.21,沉澱量=0.05+3.8*大豆重量百分濃度-42.09*增稠劑重量百分濃度,浮油量=0.05+2.26*植物油重量百分濃度,蛋白質總量=大豆重量百分濃度+乳清重量百分濃度+酪蛋白 鈉重量百分濃度+酪蛋白鈣重量百分濃度,醣類總量=糊精重量百分濃度+增稠劑重量百分濃度+糖漿重量百分濃度+纖維重量百分濃度,及脂肪總量=植物油重量百分濃度+中鏈甘油三酯重量百分濃度+大豆卵磷脂重量百分濃度;(3)根據步驟(2)中所預測之該性狀特徵,自該一或多種重量百分濃度比例組中選出一或多種所欲的重量百分濃度比例組;(4)根據步驟(3)中所選出的該一或多種所欲的重量百分濃度比例組來製備該液態營養調配物,其中:該大豆蛋白為大豆分離蛋白;該乳清蛋白為濃縮乳清蛋白;該糊精為麥芽糊精及/或難消化性糊精;該糖漿為麥芽糖漿;該纖維為菊糖纖維及/或果寡糖;該植物油為葵花油、芥花油、大豆油、紅花籽油或其組合;該中鏈甘油酸酯為含有6-12個碳原子碳鏈的脂肪酸與甘油酯化生成的脂肪酸甘油三酯;及該增稠劑為鹿角菜膠及/或阿拉伯膠。
- 如請求項1之方法,其包含:(5)根據步驟(4)所製備之該液態營養調配物之實際性狀特徵,進一步調整酪蛋白鈉、酪蛋白鈣、大豆蛋白、乳清蛋白、糊精、糖漿、纖維、植物油、中鏈甘油三酯、大豆卵磷脂及/或增稠劑之重量百分濃度比例,且另製備一或多種液態營養調配物。
- 如請求項1或2之方法,其中該液態營養調配物可進一步包含一或多種維生素及/或一或多種礦物質。
- 如請求項3之方法,其中該維生素為維生素A、維生素B1、維生素B2、維生素B6、維生素B12、維生素C、維生素D3、維生素E、維生素K1、膽鹼、葉酸、生物素及泛酸。
- 如請求項3之方法,其中該礦物質為鈣、鐵、鉀、碘、氯、鎂、鋅、銅、錳、鉻、鉬、硒及矽。
- 如請求項1或2之方法,其中步驟(2)中之該性狀特徵可進一步包含調配物價格,且該調配物價格係由下列公式所計算並預測:調配物價格=56.49*大豆重量百分濃度+110.29*乳清重量百分濃度+118.63*酪蛋白鈉重量百分濃度+141.23*酪蛋白鈣重量百分濃度+9.89*糊精重量百分濃度+209.28*增稠劑重量百分濃度+9.04*糖漿重量百分濃度+63.67*纖維重量百分濃度+32.15*植物油重量百分濃度+56.49*中鏈甘油三酯重量百分濃度+32.28*大豆卵磷脂重量百分濃度。
