Abstract

Islenen ve belirli bir forma sokulan domuz yaginin/etinin, kimyasal katkilar ve stabilizatörler kullanilmaksizin, sogutmaksizin lezzetini koruyabilecegi ve ambalaji disinda uzun süre sogutucuda saklanabilecegi ve gerektiginde mahfazadan kolayca porsiyon halinde alinabilecegi bir füme domuz yagi-et üretimi yöntemi ve bu yöntemle üretilen domuz yaginin/etinin özel kullanim tarzidir. Bu yöntemin özelligi, üretilen domuz yagi/eti kütlesinin özellikle tüplere doldurulmasidir ve bu yöntemde hazirlanmis olan % 35 ila % 65 oraninda yag-et oranina sahip, tercihen karin yaginin/etinin lifleri, bir enfraruj aygitiyla ayrilir ve yag-et kütlesi, uygun bir pH-Derecesiyle +2 C ila +3 C derece sicaklikta karanlik bir odada salamura edilir ve ''Graved--Art'' tarzinda olgunlastirilir, daha sonra yagin-etin tuzu ayristirilir ve yag/et, temizlenmis kayin agaci dumaniyla azami 25 C derecelik bir sicaklikta altin sarisi renk alincaya kadar füme edilir ve bu sekilde hazirlanan yag/et,(DEVAMI VAR)
