Zeytinyaginin, enzimsel olarak acilik-giderici etkinlige sahip, emülsiyonlastirilmis bir su fazina maruz birakilmasi ve/veya bir su fazinin, yüksek bir polifenol muhtevasina sahip bir su faziyla emülsiyonlastirilmasi ve su fazinin buharlastirilmasiyla, yüksek bir polifenol muhtevasina ve düsük düzeyde aciliga sahip zeytinyagi elde edilmektedir.
