Изобретение относитс к винодельческой промышленности. Известен способ созревани Напитков в присутствии ионов меди i. Наиболее близким к изобретению из известных вл етс способ созревани напитков, предусматривающих выдержку напитка в резервуаре в тфисутствии древесины дуба н введение в него кисло рода 2. Недостатками Такого способа вл ют с длительность процесса созревани и невысокое качество готового продукта. Цель изобретени - ускорение окислительно- восстановительных пронессов, реакции этерификаини и меланоидинообраа вани и повышение таким, образом качества ГОТОВО1ХЭ продукта. Это достигаетс тем, что в предлагаемом способе в напиток дополнительно ввод т медные пластины плошадьк от 3 до 10 а на 1 л напитка, толщиной от Г до 3 мм, а вьщержку осуществл ют при 40-80 0 от 1О суток до 4 мес цев в зависимости от типа напитка, при этом древесину, дуба используют длиной 2SO-doO мм, шириной 1О-40 мм, толщиной 0,5-2,0 мм н площадью от 5О до 1ОО см на 1л. Предлагаемый способ осуществл ют следующим образом. Напиток дл созревани перекачивают в резервуар, куда помещают медные пластины площадью от 3 до Ю см на 1 л напитка, толщиной от 1 до 3 мм и дубовую древесину в виде пластин длиной 2ОО-Зрр мм, шириной 10-40 мм, толпшной 6,5-2,0 мм и площадью от ВО до 100см на 1 л. Выдержку осуществл ют при введении кислорода в количестве 3 - 8 мг/л от 1О суток до 4 мес цев в зависимости от типа напитка , после чего найиток обрабатывают известными способами.
