Description
Known drying of yeast various hygroscopic substances.
п. во вращающийс барабан с гигроскопическими веществами, например,обезвоженным крахмалом, силикагелем и пр., причем барабан снаружи подвергают охлаждению, с целью поддержани низкой температуры сушки, примерно , 14°.The proposed method of drying the yeast is that, in order to avoid altering the enzymes, the yeast, alone or mixed with starch, is placed in fabric bags, etc., into a rotating drum with hygroscopic substances, for example, dehydrated starch, silica gel, etc. the drum is cooled outside to maintain a low drying temperature of about 14 °.
The technological process of drying the yeast, according to the proposed method, is carried out as described below.
Pressed yeast is crushed into small pieces mixed with starch (potato or other), after which the mass enters cotton or canvas bags placed in a slowly rotating metal drum in special mesh pockets of it, surrounded by dehydrated starch, silica gel or other suitable hygroscopic substances. . When the drum, which is irrigated outside with cold water, is rotated in order to maintain the temperature inside the drum not exceeding 14 °, the moisture of the yeast gradually passes first into the surrounding starch, and from there to the specified absorbent, and this transition occurs very smoothly and regularly, resulting in yeast does not undergo those changes which are caused in them; conventional drying methods. The dried yeast produced according to the described method, as all its enzymes that are intact, raise the bread dough well and is a product equivalent to fresh pressed yeast. At the end of the drying, the yeast is separated on the mill from the surrounding starch, which is used for the subsequent drying of the new batch of yeast. The starch or silica gel, which were dehydrated at the beginning of drying, absorbs the moisture of the yeast during drying and must be dewatered again in a special drum for reuse in the following dryers.
The advantage of the proposed method
ауха.is the complete safety of the yeast enzyme complex. This is explained by the fact that with all the methods used up to now for drying compressed yeast (in a current of heated air, in vacuum, spraying, etc.), the yeast was always subjected to the oxidative action of atmospheric oxygen and weakening the enzymatic complex of the yeast, as a result of which the lift of the dried yeast is very much lost. According to the proposed method, a low drying temperature is applied with almost complete exclusion of the effect of air.
