При этом .крахмалистое сырье сбраживали или периодическим методом или циклическим (поточным); паточные растворы сбраживали непрерывным методом. В качестве маточных дрожжей предлагаетс  использовать отъем бражки из крахмалистого сырь  в количестве 30-60% от всего объема крахмалистой бражки. Этот отъем антисептируют серной или сол ной кислотой до кислотности дрожжей, обычно примен емой в производстве . Подкисленный отъем непрерывно вводитс  в дрожжегенератор/где отбраживаетс  в течение 2-3 час. К выход щей из дрожжегенератора массе добавл етс  остальной крахмалистый затор и смесь сбраживаетс  в батарее последовательно соединенных аппаратов. Паточные заторы с концентрадией 22-25% добавл ютс  в зерновую бражку во второй стадии таким образом, чтобы сбр аживание углеводов оканчивалось одновременно.
