Abstract
Изобретение относится к способу определения степени испорченности растительных масел или жиров для обжаривания во фритюре или жарения пищевых продуктов, при котором измеряют удельное омическое сопротивление растительных масел или жиров, и величину уменьшения этого сопротивления с возрастанием времени обжаривания во фритюре или жарения используют в качестве критерия степени испорченности растительных масел или жиров.

- Изобретение относится к способу определения степени испорченности растительных масел или жиров для обжаривания во фритюре или жарения пищевых продуктов, при котором измеряют удельное омическое сопротивление растительных масел или жиров, и величину уменьшения этого сопротивления с возрастанием времени обжаривания во фритюре или жарения используют в качестве критерия степени испорченности растительных масел или жиров.
