Предполагаемое изобретение относится к очистке сахаросодержащих растворов, а именно к технологическому процессу удаления несахаров из диффузионного сока. Для увеличения седиментационных и фильтрационных свойств преддефекованного осадка и снижения содержания веществ коллоидной дисперсности в очищенном соке способ включает смешивание сока с суспензией сатурации, наращивание щелочности известью в несколько стадий, изменение режима движения жидкости на стадии pH 10,8 - 11,0, pH - паузу 5 - 10 мин, стадию коагуляции и введение карбоната кальция.
