В качестве сырья используют дубовую клепку, находившуюся в контакте с коньячным спиртом в течение 9 лет и более. Клепку предварительно дробят на щепу, а в качестве первичного экстрагента используют спирт-ректификат. После настаивания на щепе первичный компонент экстракта сливают. Сырье обрабатывают вторичным экстрагентом, в качестве которого используют умягченную воду.
