There is also a method of producing porous tablets of milk sugar (RF patent for the invention No. 2661200, class IPC A23C 1/00, C13K 5/00, A23C 21/00, publ. July 16, 2018), which includes the degreasing of whey, separation of casein particles , ultrafiltration, nanofiltration for partial demineralization and concentration, electrodialysis desalination to a mineral content of 0.04%, condensation in a vacuum evaporator up to 60-65% dry matter, crystallization of lactose from supersaturated syrups, washing with water at a temperature of 5-6 ° C la crystal separation cessa to a moisture content of 7-10%, moreover, the formation of porous tablets in a matrix is carried out using a device for producing porous tablets of milk sugar in two stages, at the first stage, molding is carried out by vibration, at the second stage, the upper layer of the tablet is rubbed into the matrix, drying and cooling of porous tablets.
The closest technical solution to the proposed one is a method for producing milk sugar with continuous crystallization of lactose (RF patent for the invention No. 2658441, IPC A23C 23/00, C13K 5/00, publ. 06/21/2018), which provides for ultrafiltration of skim milk at a temperature of 18 -20 ° C, the obtained permeate with a solids content of 5.2-5.4% is sent to nanofiltration, where at a temperature of 18-20 ° C desalted to a level of 25-30% and concentrated to a solids content of 18-20%. After nanofiltration, permeate is fed to electrodialysis, where it is desalted to a level of 70-90% at a temperature of 18-20 ° C and a solution quality of 0.955-0.974 is obtained, it is concentrated to a supersaturation coefficient of 1.8-2.7, then it is sent to continuous crystallization to a final temperature 10-12 ° C with a cooling rate of 1.5-2.0 ° C / min.
The main disadvantage of all the above methods is that the level of demineralization of lactose-containing raw materials achieved by nanofiltration in them by 25-30% is insignificant, and therefore, to achieve the required level of demineralization in 90%, a long electrodialysis treatment is required.
The dependence of the concentration of salts in the treated solution on the operating time of the electrodialysis unit, with constant voltage on the membrane package, is expressed by the exponential law:
С = С0 ⋅ e-kt , (1)C = C 0 ⋅ e -kt , (1)
где С – текущее значение зольности сырья, трактуемой как отношение концентрации золы к массовой доле сухих веществ;where C is the current value of the ash content of raw materials, interpreted as the ratio of the concentration of ash to the mass fraction of solids;
С0 – ее начальное значение;C 0 is its initial value;
t – время работы электродиализной (ЭД) установки;t is the operating time of the electrodialysis (ED) installation;
k – константа, отражающая эксплуатационные характеристики ЭД-установки.k is a constant reflecting the operational characteristics of the ED installation.
To achieve the level of demineralization D = 0.9 (90%), the value of time tо calculated by the formula (1) will be
t0 = 1/k ⋅ ln (C0/C) (2)t 0 = 1 / k ⋅ ln (C 0 / C) (2)
Since, by definition, D = 1 - C / C 0 , then
С0/С = 1/(1 – Д) (3)C 0 / C = 1 / (1 - D) (3)
(2)Substitute (3) in (2)
t0 = 1/k ⋅ ln (1/1 – Д) (4)t 0 = 1 / k ⋅ ln (1/1 - Д) (4)
0,9, When D = 0.9,
t0 = 1/k ⋅ ln 10 = 2,3/k (5)t 0 = 1 / k ⋅ ln 10 = 2,3 / k (5)
Partial demineralization of lactose-containing raw materials using nanofiltration to the level of demineralization D 1 = 0.3 (30%), allows to reduce the time of subsequent electrodialysis processing, necessary to achieve the required value D = 0.9. Indeed, substituting in the formula (1) instead of C 0 the value of C 1 achieved after nanofiltration, we obtain
t1 = 1/k ⋅ ln (С1/С) (6)t 1 = 1 / k ⋅ ln (С 1 / С) (6)
Since C 1 = C 0 (1 - D 1 ), and C = C 0 (1 - D), then finally
t1 = 1/k ⋅ ln (1 – Д1/1 – Д) = t0 = 1/k • ln (0,7/0,1) = t 1 = 1 / k ⋅ ln (1 - D 1/1 - D) = t 0 = 1 / k • ln (0,7 / 0,1 ) =
= 1/k ⋅ ln 7 = 1,94/k (7)= 1 / k ⋅ ln 7 = 1.94 / k (7)
Dividing expression (5) by (7), we obtain
t0/t1 = 2,3/1,94 = 1,18 (8)t 0 / t 1 = 2.3 / 1.94 = 1.18 (8)
Thus, the use of nanofiltration as, not only a low-energy-intensive method for preconcentration of lactose-containing raw materials, but also for its partial demineralization, can reduce the time spent on subsequent ED processing by 18% or, which is the same, increase 1.18 times ED installation performance.
Disclosure of invention
The objective of the invention is the creation of a method for the production of milk sugar with higher productivity.
The objective of the proposed method is to improve the nanofiltration process, providing a higher value of the level of demineralization of lactose-containing raw materials while maintaining the performance of the nanofiltration (NF) installation.
0,9.The technical result is to increase the level of demineralization of lactose-containing raw materials after its nanofiltration to values of 0.52-0.60 without reducing the performance of the NF installation, which leads to a reduction in the time of the subsequent ED processing to achieve the required level of demineralization equal to 0.9.
The specified technical result is achieved by the fact that the method of production of milk sugar involves ultrafiltration of skim milk or whey, nanofiltration of permeate, electrodialysis to a demineralization level of 90% of the initial ash content, thickening, crystallization of lactose, separation of lactose crystals, washing and drying thereof, and according to the invention, nanofiltration is carried out according to a periodic scheme, starting with a fixed volume of raw materials, amounting to 15-20% of the initial volume of raw materials, followed by feeding lenny volume of the remaining part of the raw material at a rate equal to the rate of filtrate removal obtained in the nanofiltration process.
The implementation of the invention
The method of production of milk sugar involves ultrafiltration of skim milk or whey, nanofiltration of the obtained permeate to a demineralization level of 52-60% and a solids content of 24-26%, electrodialysis to reach a final demineralization level of 90%, thickening on a vacuum apparatus to a supersaturation coefficient of 1, 8-2.7, cooling the supersaturated syrup with a cooling rate of 1.5-2.0 ° C / min to a temperature of 10-12 ° C, crystallization of lactose for 20-22 hours, separating the crystals, washing and drying them.
The main technical result is to reduce the time for cleaning lactose-containing raw materials from minerals. Indeed, if after nanofiltration by the proposed method, the achieved level of demineralization will be equal to D 2 = 0.6, then the time t 2 spent on subsequent electrodialysis to reach the final level of demineralization equal to D = 0.9, calculated by the formula (7), will be equal
t1 = 1/k ⋅ ln (1 – Д2/1 – Д) = t0 = 1/k ⋅ ln (1 – 0,6/1 – 0,9) = t 1 = 1 / k ⋅ ln (1 - D 2/1 - D) = 0 t = 1 / k ⋅ ln (1 - 0.6 / 1 - 0.9) =
= 1/k ⋅ ln 4 = 1,38/k (9) = 1 / k ⋅ ln 4 = 1.38 / k (9)
Сравнивая t2 в (9) с t1 в (7) для обычной нанофильтрации, получим, что по предлагаемому способу время ЭД-обработки сократилось в 1,4 раза по сравнению с аналогом t1/t2 = 1,94/1,38 = 1,41.Comparing t 2 in (9) with t 1 in (7) for conventional nanofiltration, we find that according to the proposed method, the ED processing time was reduced by 1.4 times compared to the analogue t 1 / t 2 = 1.94 / 1, 38 = 1.41.
Another technical result is that an increase in the level of demineralization of lactose-containing raw materials from ordinary values of 25-30% to 52-60% leads to a proportional increase in the excretion of raw materials and other low molecular weight compounds, for example, non-protein nitrogen, poorly derived from raw materials by electrodialysis. This leads to an additional increase in the benignness of UV-permeates by 0.5-1.2%, which is important in the production of high-quality milk sugar.
An additional positive technical result is that the enhanced removal of low molecular weight components in the proposed method leads to a more rapid decrease in the osmotic pressure in the concentrate nanofiltered raw materials in comparison with analogues. At a given value of the working pressure at the NF plant, this leads to an increase in the final concentration of dry solids in the feed from the usual 18-20% to 24-26%, which provides significant energy savings during subsequent thickening of the feed in a vacuum evaporator.
1.Example 1
The initial volume of permeate obtained after ultrafiltration of skim milk with a volume of 60 l, with an initial concentration of solids of 5.22%, an ash content of 0.61% and a benign quality of 78.1% was subjected to nanofiltration according to a periodic scheme on a laboratory NF unit with a membrane area of 0.98 m 2 , at a temperature of 18 ± 1 ° C and an inlet pressure of 30 bar. The initial volume of raw materials was 11 liters. The permeate was supplied to a fixed volume in such a way that the marker fixing the amount of volume in the feed tank did not change its position, which indicated that the feed rate to the working unit was equal to the speed of the outgoing filtrate. The nanofiltration process was completed after 58 min, after the full consumption of native permeate. In the obtained 11 l of NF concentrate, the mass fraction of solids was 25.9%, the ash content was 0.25%, and the purity was 88.2%. The level of demineralization was
Д = 1 – 0,25/0,61 = 0,59 (59%)D = 1 - 0.25 / 0.61 = 0.59 (59%)
95,1%.Further, the NF concentrate was subjected to electrodialysis treatment to achieve an ash content of 0.06%, which corresponded to a demineralization level of 0.92 (92%). The quality of raw materials after ED treatment increased to 95.1%.
99,3%.In order to obtain milk sugar, 2 l of the obtained demineralized NF-concentrate with a mass fraction of solids of 23.8% were concentrated on a laboratory rotary vacuum-evaporation plant to a mass fraction of solids of 61.3%. The obtained 0.77 L crystallizate with a temperature of 72 ° C was placed in a thermostat and cooled at a rate of 2 ° C / min to 11 ° C. At this temperature, the crystallizate was kept for 20 hours, the supernatant was carefully drained, and the obtained latoa crystals were washed with 400 ml of distilled water with a temperature of 6 ° C. After settling, the supernatant was again drained, and the obtained lactose crystals were dried in an oven at 70 ° C to constant weight. 685 g of lactose were obtained with a moisture content of 2.8% and a purity of 99.3%.
2.Example 2
The initial volume of permeate obtained after ultrafiltration of cheese whey with a volume of 60 l, with an initial solids concentration of 4.95%, a gold content of 0.72% and a benignness of 77.3% was subjected to nanofiltration according to a periodic scheme at a temperature of 18 ± 1 ° C and inlet pressure 30 bar. The initial volume of raw materials was 11 liters. this volume of raw materials, due to the equality of the rates of supply of raw materials to the raw material tank and the removal of the filtrate, was maintained constant throughout the entire process of nanofiltration. The nanofiltration process was completed after the full consumption of native permeate after 61 minutes. In the obtained 11 l of NF concentrate, the mass fraction of solids was 24.1%, the ash content was 0.31%, and the purity was 86.8%. The level of demineralization was
Д = 1 – 0,31/0,72 = 0,57 (57%)D = 1 - 0.31 / 0.72 = 0.57 (57%)
94,6%.Further, the NF concentrate was subjected to electrodialysis treatment to achieve an ash content of 0.065%, which corresponded to the level of demineralization D = 1 - 0.065 / 0.72 = 0.91 (91%). The quality of raw materials after ED treatment increased from 86.8% to 94.6%.
1.As in Example 1, 2 L of demineralized NF concentrate were used to produce milk sugar. With a mass fraction of solids in the NF concentrate after its ED treatment of 23.1%, 637 g of milk sugar were obtained with a moisture content of 2.78% and a benignness of 99.1%. The values of all parameters when receiving milk sugar were taken from example 1.
The value of a fixed volume of 15-20% of the initial volume of raw materials was established experimentally. It is such a value of a fixed volume that allows you to finish the nanofiltration process at a time when, at the same time, the raw materials supplied to a fixed volume were completed and the minimum declared value of the filtration rate was reached, a decrease in which was caused by an increase in the osmotic pressure in the raw materials concentrated by nanofiltration.
