Abstract
Description
п.).The invention relates to the food industry, in particular to food products containing biologically active substances, intended, in particular, to enrich the diet in order to provide the human body with all the necessary and digestible macro- (proteins, fats, carbohydrates, mineral elements, amino acids, etc.) .p.) and micronutrients (trace elements, vitamins, enzymes, enzymes, etc.).
As promising sources of raw materials for the creation of biologically active food additives, bee products are of practical interest: honey and bee pollen from flower pollen, containing in a balanced state a whole complex of substances necessary for normal functioning of the body. Therefore, these products are not only the most valuable food products, but also have a wide range of therapeutic effects.
A known product containing honey, pollen (bee stalk), citric acid and drinking water [RF Patent No. 2420097, cl. A23L 1/08, application No. 201004277/13, 02/08/2010, op. 06/10/2011].
Flower pollen-pollen is an indigestible product, since human gastric juice (acid solution) is not able to destroy the outer shell of pollen grains - exin (also no alkali can destroy it). When a person eats pollen pollen-pollen or pollen pollen-pollen in a mixture with honey, some interaction of the digestive juices with the contents of pollen grains does occur through pores in exine (aperture) and partially dissolved inner shell - intin. As a result, an insignificant part of the nutrients is absorbed, and another, large, part remains inaccessible.
The disadvantage of the above product is the inability to completely remove all components of pollen grains (pollen pollen-pollen), which limits the effectiveness of their use.
The process of complete extraction of pollen components can occur by destroying the exins of pollen grains by enzymes and bacteria when fermented in a mixture with honey. Such processes occur, for example, in perga or in the production of a well-known beverage (RF Patent No. 2037303, class A23L 1/08, C12G 3/06, application No. 94021759/13, 06/17/1994, op. 19.06.1995, ) At the same time, bee bread is an expensive and not technologically advanced product, and the drink is an alcoholic product, that is, limited in use.
As a prototype of the selected technological process of production of the product, known from the above patent of the Russian Federation No. 2420097 and consisting of the following operations. Natural honey is heated to a temperature according to GOST 82197-2001, not exceeding 60 ° C, in order to reduce its viscosity. Citric acid is diluted with water in a ratio of 1: 1 and thoroughly mixed. Flower pollen (dry pollen) is ground to a powdery state with particle sizes of not more than 0.05 mm. Drinking water is filtered.
Задачей изобретения являлось создание способа получения концентрата безалкогольного напитка с повышенной биологической активностью за счет максимально полного извлечения всех компонентов пыльцевых зерен (цветочной пыльцы-обножки).The objective of the invention was to provide a method for producing a non-alcoholic beverage concentrate with increased biological activity due to the maximum complete extraction of all components of pollen grains (pollen pollen-pollen).
This problem is solved by the method of obtaining a soft drink concentrate with increased biological activity from beekeeping products containing honey, pollen pollen, citric acid and water, in which, according to the invention, in a 14-18 wt.% Aqueous solution of citric acid with a concentration of 5- 8% add 4-16 wt.% Pollen-pollen grains, mix and insist for 0.5-10 hours, as a result, the outer shell (exins) of pollen grains (pollen pollen grains) swells; then the infused mixture is mixed and introduced into 60-80 wt.% honey, preheated (to reduce viscosity) to a temperature not exceeding 60 ° C and mixed again; under the influence of enzymes and enzymes of honey inside the pollen grains (pollen pollen), pressure increases through small pores in exine (aperture) and the inner shell of pollen grains (intin) extrudes outward, thereby completely transferring the contents of pollen pollen grains to the resulting concentrate , forming a mixture in which honey and the contents of pollen grains (flower pollen pollen) act synergistically, i.e. mutually increase the degree of influence of the positive biologically active properties of each of them on the human body.
In the process of developing a method for producing a beverage concentrate during optimization of the formulation, the best organoleptic, physicochemical and economic indicators of the product were revealed in terms of taste, biological activity and cost characteristics. Taste qualities were determined by the tasting assessment of the product, and biological activity was determined by treating grains, and subsequently wheat germ, with an aqueous solution of the product obtained by the proposed method, with a concentration of 0.2 to 0.5% with video recording of the plant development process. With a decrease in the norm of component components below the minimum values, biological activity decreases, and with an increase above the maximum values, there is no increase in biological activity, and cost characteristics increase. Comparison was made with control specimens grown by the usual method.
The following are examples of the implementation of the claimed method for producing a concentrate of a non-alcoholic beverage with increased biological activity.
