Claimed vodka has degustation evaluation of 9.78-9.80.

EFFECT: vodka with improved organoleptic characteristics.

Description

The invention relates to the distillery industry.

Known vodka "UNCLE VANIA KREPKA", containing, along with other ingredients, citric acid, glycerin, a sweetening ingredient, and water-alcohol liquid (RF Patent No. 2144073, class C12G 3/06, publ. 2000) [1].

However, the organoleptic properties of this famous vodka are low.

Known vodka "ALEXANDER II", containing, along with other components, citric acid, honey, natural and water-alcohol liquid (RF Patent No. 2116341, CL 12G 3/06, publ. 1998) [2].

Organoleptic characteristics of this famous vodka are not high enough.

A known method of introducing into the composition of vodka various additives that reduce the negative effect of alcohol on the human body.

So, the complex food supplement "Lactorin" is known, which has alkoprotective properties when it is added to vodka (Are Mendeleev’s Precepts Recipe for Russian Vodka Formulations - Drinks. News and Analytics Grow. 2005, No. 3, p. 2) [3].

To give vodka a special specific aroma, various components are used: flavors, aromatic alcohols.

So, special vodka “GOLD-HEADED CRANBERRY” is known, containing citric acid, lactose, cranberry flavoring, sugar and water-alcohol liquid (RF Patent No. 2160773, class C12G 3/06, publ. 2000) [4].

This known special vodka has a honey-cranberry tone in taste against the background of a pronounced vodka taste.

The closest special vodka offered is the famous vodka special “GOSTINNY DVOR KLUKVENNAYA”, containing cranberry aromatic alcohol, a sweetening ingredient and a water-alcohol liquid (RF Patent No. 22525249, class C12G 3/06, publ. 2005) [5].

The aroma of this famous vodka has a subtle cranberry-sea-buckthorn tone, but its organoleptic characteristics are not high enough.

The technical result achieved by the present invention is to improve the organoleptic properties of special vodka, giving it a cranberry flavor with a light lime-colored tone.

This technical result is achieved due to the fact that special vodka containing cranberry aromatic alcohol, a sweetening ingredient and a water-alcohol liquid contains natural honey as a sweetening ingredient, additionally contains glycerin, citric acid and Lactorin complex food supplement with the following contents of ingredients , l per 1000 gave:

cranberry flavor 37.0-39.0 complex nutritional supplement "Lactorin" 4.4-5.5 glycerol 0.35-0.45

and also, kg per 1000 gave:

citric acid 0.12-0.18 natural honey 4.5-5.5 water-alcohol liquid the rest is up to 40% blend strength

For the preparation of special vodka, the complex food additive "Lactorin" according to TU 9229-007-56758878-04 was used.

Cranberry aromatic alcohol was prepared by pouring 15.0 kg of fresh cranberry berries into 75.0 l of an aqueous-alcoholic liquid with a strength of 50%, followed by distillation and obtaining aromatic alcohol with a strength of 75%.

The following are examples illustrating the invention.

Example 1. Prepare vodka with the following ingredients, l per 1000 gave:

cranberry flavor 37.0 complex nutritional supplement "Lactorin" 4.4 glycerol 0.35

and also, kg per 1000 gave:

citric acid 0.12 natural honey 4,5 water-alcohol liquid the rest is up to 40% blend strength

The prepared vodka sample has high organoleptic characteristics: a tasting score of 9.78. The aroma is characteristic of vodka with the aroma of cranberries and a light tone of lime color.

Example 2. Prepare vodka with the following ingredients, l per 1000 gave:

cranberry flavor 39.0 complex nutritional supplement "Lactorin" 5.5 glycerol 0.45

and also, kg per 1000 gave:

citric acid 0.18 natural honey 5.5 water-alcohol liquid the rest is up to 40% blend strength

The prepared vodka sample has high organoleptic characteristics: a tasting score of 9.80. The aroma is characteristic of vodka with the aroma of cranberries and a light tone of lime color.

Example 3. Prepare vodka with the following ingredients, l per 1000 gave:

cranberry flavor 36.0 complex nutritional supplement "Lactorin" 4.2 glycerol 0.30

and also, kg per 1000 gave:

citric acid 0.10 natural honey 4.2 water-alcohol liquid the rest is up to 40% blend strength

The prepared vodka sample has low organoleptic characteristics. The aroma is characteristic of vodka with the aroma of cranberries. The tint of lime in the aroma is not captured.

Example 4. Prepare vodka with the following ingredients, l per 1000 gave:

cranberry flavor 39.3 complex nutritional supplement "Lactorin" 5.7 glycerol 0.48

and also, kg per 1000 gave:

citric acid 0.2 natural honey 5.7 water-alcohol liquid the rest is up to 40% blend strength

The prepared vodka sample has low organoleptic characteristics. The tone of lime in the aroma is absent.

Thus, the special vodka according to the invention has high organoleptic characteristics due to giving its aroma a light, pleasant tone of lime color.

Special vodka, containing cranberry aromatic alcohol, a sweetening ingredient and a hydroalcoholic liquid, characterized in that it contains natural honey as a sweetening ingredient, additionally contains glycerin, citric acid and the Lactorin complex food supplement with the following ingredients, l per 1000 gave: cranberry flavor 37.0-39.0 complex nutritional supplement "Lactorin" 4.4-5.5 glycerol 0.35-0.45 and also, kg per 1000 gave: citric acid 0.12-0.18 natural honey 4,5-5,5 water-alcohol liquid the rest is up to 40% blend strength
