Abstract
Description
The invention relates to the field of food processing using acids, and in particular to a method for preparing sea urchin caviar.
[1]. A known method of preparing fish caviar by canning, in which an aqueous salt solution is used as a preservative, and the technological process of salting is carried out in containers with holes [1].
However, when using this method, sea urchin caviar has low organoleptic properties.
[2]. A known method of preparing fish caviar by canning, selected as a prototype, in which a mixture of potassium bicarbonate with sorbic acid with a concentration of 0.4 ... 0.5% and 0.1 ... 0.15% can be used as a preservative to the mass of caviar, respectively [2].
This method does not sufficiently preserve the taste of caviar of the sea urchin, and also does not allow for a long shelf life of the finished product.
The aim of the invention is to improve the organoleptic properties and shelf life of canned sea urchin caviar.
The specified goal is achieved as follows. The method of preparation of cannabis caviar of a sea urchin canning is carried out in an aqueous solution of organic food acid at a temperature of 5 - 20 o C for 5 to 30 minutes Then, the caviar is removed from the solution for draining the preservative for 30 to 90 minutes. After draining the preservative, the fins can be tightly packed in a packaging container.
Sorbic acid with a flow rate of 100-200 g per 100 kg of caviar can be used as an acid, and the concentration of an aqueous solution can be from 5 to 40%. The preparation of an aqueous solution of sorbic acid is best done as follows: the required amount of acid is dissolved in half of the required volume of water at a temperature of 40 - 80 o C, and then the remaining amount of water is added to the resulting solution. It is also possible to use ascorbic acid with a flow rate of 150 - 220 g per 100 liters of water.
Technological operations of preliminary accumulation of fresh caviar roasts, subsequent washing and preservation are best done in the same bathtub with through holes, and the holes can be of any shape 2 ... 5 mm in size and located on the bottom and side walls of the bathtub.
The invention is illustrated by example.
0,3%.Caviar pails intended for canning accumulate in a bath with bottom and side holes 2 ... 5 mm in size. The bath is placed in clean sea water at a temperature of 15 o C, where the patches are washed from the remnants of the insides and other contaminants. Next, the bath with the patches is placed in clean water, where veins, shell fragments, etc. are removed. Then the bath with the hawks is placed in the bath with a preservative. For the preparation of a preservative, sorbic acid (E 200) is used - 100 g per 100 kg of caviar. The aqueous acid solution should be at a concentration of 5%. First, the acid is dissolved in half of the required volume of water heated to 50 ° C., and after complete dissolution, the remaining water is added. A tray with caviar patches is in the preservative for about 20 minutes at a temperature of 20 o C, after which the tray is removed from the solution for draining the remaining preservative from the surfaces of the patches. Further, the caviar in the form of individual pails or pieces of pails is placed in a packaging container. The salinity of the finished caviar is about 0.3%.
