Abstract
Description
The invention relates to technical solutions for improving the quality of food products that are consumed in raw or heated form. The first types of products include all fruits and vegetables that do not require high-temperature processing. The second group of products includes any ready-made dishes that require only heating in the shell itself, where it is located, and the heating temperature does not lead to the destruction of the shell (prepared meat dishes, fish or poultry dishes, cereals and similar dishes).
Known methods for storing products by placing them in a container and at a reduced temperature and extracting the product before use (patent N 2004127), any type of refrigerator, for example, "Stinol", "Minsk", etc.). A drawback of such food storage is dehydration of the mass from exposure to low temperature, which limits the shelf life if the product contains a significant percentage of water.
Widely known are methods for storing food products in flexible shells in which a food product is placed, a flexible shell is sealed, and the shell is opened before using the product. Thus, all types of milk of Russian or imported production, salted fish products, and cookies are stored. This storage method is used by all companies around the world.
The storage method described above retains moisture in the mass of the food product. However, the food product will at best retain its nutritional qualities, which it acquired during packaging.
The purpose of the technical solution is to improve the quality of the food product and give it healing properties.
This goal is achieved by the fact that before sealing the inner cavity of the shell is filled with oxygen and the product is held in an oxygen atmosphere until the product mass is saturated, and the shell is configured to communicate with the external environment and in the direction of the external environment with increasing pressure in the internal cavity of the shell.
Explanations of the method.
The use of a product that is saturated with oxygen leads to an increase in oxygen in the body, intensification of metabolic processes, oxygen saturation of the blood, and an increase in potential load, since oxygen enters all organisms (muscles, heart). Especially important is the consumption of such products for heart patients, with intense physical activity (athletes, during underground work).
2. The implementation of the method will not meet technical difficulties, as a rule, laying and sealing of the product in a flexible shell is carried out on automatic lines. An operation is introduced to supply oxygen to the inner cavity of the shell, first with a purge, to remove air, and then for saturation. In order not to make the shell excessively strong, it is desirable to enclose a shell and a detachable shape at the position of oxygen saturation of the product mass. This will allow a more intense saturation process by increasing the oxygen supply. The demountable form will also increase fire safety, separating the filling zone from the external environment. It is possible to use equivalent technical solutions when oxygen saturation is carried out in a separate isolated chamber, filling it with oxygen under pressure. However, to intensify the process, you must first remove the gas from the saturated mass, by increasing the temperature and vacuum pumping before oxygen supply. The degree of gas removal from the mass of the product can be determined by analyzing the pumped gas. If after removing gas from the chamber and supplying the product without delay to the packaging line, the loss of oxygen from the mass of the product will be negligible. If the product can experience significant structural changes with loss of taste and biological qualities, then the mass of the product can be saturated before the sale itself by connecting the package (one or more, in parallel or sequentially) to the source of purging of the inner cavity of the package with flowing gas and subsequent supply of oxygen with a purge of up to oxygen saturation of the mass of the product with subsequent disconnection of the packaging and sealing of the holes for supplying and discharging gas and oxygen.
3. The package can be stored either in preparation for use at an elevated temperature, therefore, to prevent rupture of the package, which will lead to oxygen loss, the shell should either have a pressure relief valve or should be made partially or completely of an elastic material to compensate for the pressure.
4. If the product can change its qualities during storage with oxygen saturation, then it is necessary to saturate with oxygen before selling, as mentioned above. It is possible to store the product saturated with oxygen at low temperatures.
For each product, the technology of saturation and storage is determined depending on the type of product and its resistance to temperature, oxygen saturation, density. This technologically by the method of samples will not be difficult, the modes of each process are also determined in the same way (purge, pumping time and holding time during filling, so that process control does not require complex equipment, and its control requires selective technological character. This is done in all technological processes.
Thus, all the goals set are achieved and most importantly: giving the product a healing character in almost any conditions and for any processions and sick people.
