Под действием последних происходит разрушение клеточных мембран растительного сырья и по меньшей мере частичная деструкция протопектиновых веществ, то есть отрыв пектиновых молекул от целлюлозно-лигнинового скелета клеточных оболочек. Степень деструкции протопектиновых веществ зависит от энергоемкости генерируемых газовым потоком колебаний давления, отнесенной к расходу обрабатываемого сырья в единицу времени. Экспериментально установлено, что при соблюдении условия непрерывности процесса, когда расход растительного сырья не превышает значения, при котором возможно витание его частиц в газовом потоке, минимальная деструкция протопектиновых веществ составляет 14,3% а максимальная 95,1% от общего количества, содержащегося в обрабатываемом сырье. Для сравнения следует учесть, что обработка замораживанием, выдержкой в течение года и дефростацией приводит к деструкции только 0,5 0,7% протопектинов. It was experimentally established that, subject to the continuity of the process, when the consumption of plant materials does not exceed a value at which its particles can flow in the gas stream, the minimum destruction of protopectin substances is 14.3% and the maximum is 95.1% of the total amount contained in the processed raw materials. For comparison, it should be noted that treatment with freezing, aging for a year and defrosting leads to the destruction of only 0.5 to 0.7% of protopectins.
