Abstract
Description
The invention relates to the food industry, in particular to methods for preserving wild food plants.
In the food industry there is a method of preserving wild garlic with pickling, in which the stalks of wild garlic without leaves are placed in glass jars and poured with hot marinade [1]
A known method of preserving wild garlic with a solution of salt, the essence of which is that wild garlic stems are cut to a size of about 0.5 cm, placed in a container and filled with brine [2]
The disadvantages of these methods is that they require manual labor, do not allow the use of the whole plant, but only the stems, which reduces the saturation of the product with vitamin C, since it is in the leaves that its highest content, in addition, wild garlic is obtained rough texture and salted.
The closest technical solution, selected as a prototype, is the wild garlic ambassador in a dry way [3] Wild garlic stalks without leaves are finely chopped to particles about 0.5 cm in size, placed in barrels, sprinkled with salt and rammed until juice appears, covered with a lid and imposed oppression . The spill lasts about 7 days, after which the wild leek is stored in barrels or in a glass container.
This method has several disadvantages: the need for barrel, low labor productivity, the use of only part of the plant, the finished product is obtained salted and rough consistency. Often with this method, fermentation begins and not salty, but pickled wild garlic is obtained.
The purpose of the invention is a more complete use of raw materials, waste reduction, obtaining a ready-to-eat product with a harmonious taste, expanding the range.
This goal is achieved by the fact that in the known method, the ambassador to the barrel is eliminated, the whole aerial part of the plant is used, finer grinding and homogenization is performed, salt, vegetable oil, sorbic acid are added.
The proposed method is implemented as follows.
Fresh wild garlic is sorted, extraneous impurities are selected, roots are cut, washed, the stalks and leaves of wild garlic are ground to a puree state. In the resulting mass add 2-3% of table salt finely ground, 0.6-1% of vegetable refined oil and 0.05-0.1% of sorbic acid. The resulting mixture is homogenized in mixers or homogenizers, tightly packed in a glass container and sealed. Jars of wild garlic are stored in refrigerators at a temperature of 0 4 o C, shelf life up to 12 months.
The proposed method of canning provides: reduction of the time of canning, as due to grinding to a puree state, wild garlic is salted almost instantly; increase in output due to the use of the entire aerial part of the plant; allows you to get a pleasant fragrant and delicate product ready to eat, increases the saturation of the product with vitamin C, since the whole plant is used, and the leaves contain 1.5 times more vitamin C than in the stems; provides increased productivity through mechanization.
The organoleptic characteristics of wild garlic are given in the table.
Such wild leek can be used as a snack, for preparing various snack dishes, as well as seasoning for the first and second dishes. All this allows to improve the supply of the population in the spring with a vitamin product.
