Известен способ консервирования побегов папоротника Осмунда, сущность которого заключается в бланшировке в пресной воде и последующей сушке и ручной обминке [2]

Все время консервирования составляет до 30 дней, расход соли составляет до 120% от массы папоротника, выход готовой продукции 60-65%

Предлагаемый способ консервирования реализуют следующим образом. Доставленный на заготовительно-перерабатывающий пункт папоротник осматривают, сортируют, нарезают на дольки 3-5 см стационарными ножами или хлеборезками (МРХ-180), или машинками для нарезки гастрономических продуктов (МРГ-300А, МРГУ-370). В котлах грибоварочных (ГК-1), пищеварочных (КПЭ-60) нагревают воду до кипения, добавляют 10% соли, нарезанный папоротник загружают в бланшировочные корзины или металлические сетки и опускают на 3-5 мин в кипящую воду.
