Claims (26)

1. Композиция, содержащая ингибирующие моноаминооксидазу (MAO) соединения и изготовленная посредством удаления этанола из спиртного напитка, произведенного из агавы, способом, который сохраняет летучие соединения, не представляющие собой этанол.
2. Композиция по п. 1, в которой спиртной напиток представляет собой дистиллят.
3. Композиция по п. 1, в которой способ представляет собой обратный осмос.
4. Композиция по п. 1, в которой спиртной напиток представляет собой дистиллят, который изготавливают, осуществляя следующие стадии:
a) нагревание стеблей кактуса агавы для гидролиза сложных сахаров;
b) резание и дробление нагретых стеблей для выделения сиропа;
c) разбавление вышеупомянутого сиропа водой до уровня от 12 до 14° BRIX и засевание дрожжами;
d) брожение засеянного разбавленного сиропа для получения продукта брожения; и
e) перегонка продукта брожения для получения дистиллята.
5. Композиция по п. 4, в которой стадия (a) осуществляется посредством обработки в автоклаве.
6. Композиция по п. 4, в которой стадия (b) осуществляется в режущем и дробильном устройстве.
7. Композиция по п. 4, в которой способ на стадии (d) включает брожение при температуре от комнатной до 30°C в присутствии дрожжей Saccharomyces cerevisiae и Kloeckera africana.
8. Композиция по п. 4, в которой стадия (e) осуществляется до тех пор, пока дистиллят не достигает концентрации этанола, составляющей, по меньшей мере, от 38 до 40 об.%.
9. Пищевой продукт или напиток, который содержит композицию по п. 1.
10. Пищевой продукт или напиток, который содержит композицию по п. 2.
11. Способ лечения состояний, отличающихся чрезмерной активностью моноаминооксидазы (MAO), причем данный способ включает введение нуждающемуся в этом пациенту эффективного для такого лечения количества композиции по п. 1.
12. Способ по п. 11, в котором вышеупомянутое состояние представляет собой депрессию или болезнь Паркинсона.
13. Способ лечения состояний, отличающихся чрезмерной активностью моноаминооксидазы (MAO), причем данный способ включает введение нуждающемуся в этом пациенту эффективного для такого лечения количества пищевого продукта или напитка по п. 9.
14. Способ анализа ингибиторов MAO в присутствии этанола, причем данный способ предусматривает включение алкогольдегидрогеназы и NAD в вышеупомянутый анализ.
15. Способ по п. 14, который включает следующие стадии:
a) добавление в анализируемый образец эффективного для субстрата количества дигидробромида кинурамина вместе с никотинамидадениндинуклеотидом и алкогольдегидрогеназой;
b) добавление MAO A и/или MAO B;
c) инкубация при 37°C;
d) прекращение реакции посредством сильного основания и
e) оценка результатов при длине волны возбуждения 310 нм и длине волны излучения 405 нм.
16. Система оценки произведенных из агавы спиртных напитков, в которой каждый напиток получает позицию на шкале качества на основании содержания в нем ингибиторов MAO A и/или ингибиторов MAO B.
