Способ производства консервированного суп-пюре из печени, характеризующийся тем, что суп-пюре в банках после расфасовки в течение 50-55 с подогревают до 93-95°С в СВЧ-камере частотой 2400±50 МГц, закатывают, устанавливают в носитель, обеспечивающий механическую герметичность банок, далее осуществляют предварительный подогрев банок с продуктом душеванием горячей водой температурой 100°С в течение 3 мин, стерилизация в ванне с раствором хлористого кальция при температуре 120°С в течении 55 мин с последующим охлаждением в потоке атмосферного воздуха при его скорости 5-6 м/с в течение 10 мин с дальнейшим продолжением охлаждения в течение 10 мин орошением водой с переменной температурой 65-25°С и при этом банка в течение всего процесса тепловой обработки вращается с донышка на крышку с частотой 0,1 с-1.
