Abstract
Способ получения диетического продукта из сока белокочанной капусты, сущность которого включает очистку, инспекцию, резку, мойку, дробление, прессование белокочанной капусты, замораживаниие и сублимационную сушку сока до влажности 3-5%, отличающийся тем, что после очистки, инспекции, резки и мойки куски капусты вакуумируют при остаточном давлении 20-30 мм. рт.ст (2660-3990 Па) в течение 10-15 мин, далее подвергают дроблению, прессованию и полученный сок замораживают и сушат сублимацией до влажности 3-5%.
